Refreshing Cucumber and Mushroom curry 
Deliciously fresh and the mushrooms bring a "meatyiness"

Ingredients 
1 large cucumber, sliced 
200 g mushrooms,sliced
1 onion , finely sliced 
2 cloves garlic
1 small price ginger
1/2 tin tinned tomatoes
Olive oil
Salt
Pepper
Tomato puree 
Ground coriander 
Ground tumeric
Ground cumin
Cumin seed
Peri peri flakes handful of hazlenuts ,crushed 
Method
Add a little oil to a pan
Add the onion and fry till translucent
Add the cucumber and cook for a few minutes before adding in mushrooms and add water (just above the mixture)
Add tomato puree, garlic , ginger and seasoning
Once water has evaporated check mushrooms, they should be just cooked through
Add on crushed hazlenuts
Serve with pitta , roti or naan

2 tbsp cacao powder
3 medjoul dates, pitted (I use Zaytoun)
50 g almonds , ground 
Maple  syrup ,to taste (I used 1 tbsp)
1 tbsp almond butter 
500 mls almond milk ( add more for a runnier consistency )

Method
Blitz dates ,almonds, almond butter, cocao powder and a little of the almond milk 
Add in the frozen banana slices and the rest of the milk 
Serve immediately or store in fridge if prefer cooler

Spicy Veggie burgers with beetroot and spinach salad

These burgers taste like pakoray /onion bhajis, are filling and a great way to use up extra veg ,you can add any that you have .

Makes 8 burgers 
1 can chickpeas,drained
3 carrots, grated 
Courgettes, grated
2 cloves garlic, minced
1 small piece ginger , grated
1 tsp tahini
1 tbsp lemon juice
Salt
Pepper
Ground cumin
Ground corainder
Cumin seeds 
Peri peri flakes
3 Naan bread(see seperate recipe)
Olive oil spray
Beetroot, cut into wedges
Handful Spinach leaves

Method
Add chickpeas and half the grated carrots and courgettes to a food processor and blend till smooth 
Add to a bowl and add seasoning ,garlic and ginger and the rest of the grated vegetables
Mix untill combined evenly
Shape into burger shapes (i used a cookie cutter)
Spray with a little olive oil
Place in preheated oven 180 degrees for 35-40 minutes 
Make the tahini dressing by combining salt, pepper ,lemon juice and tahini 
Cut the naan bread using the same cookie cutter
Sandwich the burgers in between the naan bread discs spray with olive oil and sear in a pan 
Add the tahini dressing to the burger 
Serve with a Beetroot and Spinach salad

The burgers can be frozen ,just defrost and warm in the oven .

Serves 4

Ingredients 
1 onion ,finely sliced
2 cans beans I used kidney and black beans,drained 
250g frozen corn
1 tinned tomatoes,chopped
Jalapenos (I used half a small had drained but use carefully for young ones 
1 tin jackfruit
Salt
Pepper
Chilli flakes
Smoked paprika
Ground cumin
Ground corainder
Garlic granules
Onion powder
Olive oil

Ingredients 
Add olive oil to a crock pot (or slow cooker)
Add onion and cook till translucent 
Add all other ingredients 
Cook on low for 1-2 hours 
Serve with tacos ,add avocado and coriander ,can be eaten with rice, added to a jacket potato, a wrap, or as a soup if left runnier.

Seasoned with dried basil + dill, garlic, red pepper flakes, tumeric, cayenne, and pink salt + pepper then baked it in the small @breville convection oven on 425 for 14 minutes. For me this is the best way to get a crispy outer edge yet still juicy on the inside. I put about 1/4 tsp @vitalfarms grass-fed butter on top immediately after. Paired it with roasted potatoes and greens drizzled in cold-pressed extra virgin olive oil mixed with [more] tumeric and black pepper. Makes approx 16 pieces

Ingredients 
100g medjoul dates ,pitted
100g walnuts 
100g almonds 
100g peanut butter 
75 g maple syrup 
Coconut oil
Sea salt

Method
Blitz the nuts in a good processor till coarsely chopped 
Leave in a bowl
Then add the  dates, peanut butter and maple syrup and mix to a  smooth paste
Combine the nuts with the pasta 
Press into a greased square tin (18cm)
Sprinkle with salt 
Place into the fridge 
After 30 minutes cut in 16 squares 
And they are ready to eat

250g Butternut squash,sliced
Small tin Sweetcorn 
1 tin Rosecoco beans
2 Carrots,cut into batons 
1/2 Broccoli
200g Cherry tomatoes ,hakved
Green beans,sliced
1 tbsp tahini
Lime ,juiced 
1 tbsp Sriracha
Smoked paprika
Avocado,mashed
Cinnamon
Olive oil spray
Chopped hazlenuts 
Peri peri flakes
Salt 
Peppper

Method
Add the butternut squash to an oven tray spray with olive oil and sprinkle smoked paprika and cinnamon and bake for 30 minutes 
Steam the brocolli and green beans
In a bowl add in the sweetcorn,cooked brocolli ,butternut squash,rosecoco beans,tomatoes , carrots and smashed avocado
Season with salt ,pepper and peri peri flakes 
Make the dressing by combining the lime juice,sriracha and tahini
Finally top with chopped hazlenuts

Turmeric latte pudding

This is such a lovely comforting dish I like it cool but no reason why this can't be eaten warm 
Serves 4

Ingredients
Freshly ground pepper
1 tsp turmeric powder
500g tapioca pearls
1 litre Rice coconut milk
Ground ginger
1 tbsp coconut oil
1/4 tsp Cinnamon
4 tbsps Coconut palm sugar 
100g Dessicated coconut 
Method
Soak the tapioca in rice-coconut milk (at least a couple of hours)
Then gently heat with all the other ingredients except the sugar and  coconut 
Once the mixture has thickened add in the sugar and coconut
Add the mixture into the ramekins and allow to cool 
Add some freshly ground pepper and coconut on top
Best served cool

Morrocon style cauliflower couscous 
I'm back ,I have still been eating healthy food but using some of my old recipes or freezer stores as my youngest has been in hospital (he's better now). Feeds 2 big 2 small (as a side dish)
Ingredients
1 cauliflower, broken into florets
2 pepper, sliced 
Onion,finely sliced 
2 handfuls frozen peas
Small time sweetcorn,drained 
Sprinkling ,Almond flakes 
1 tbsp,dried blueberries
500mls vegetable stock
Olive oil
Salt
Pepper
Garlic granules 
Turmeric powder
Ras el hanout

Method
Put the florets into a food processor untill the mixture represents couscous texture
Add some olive oil to  a pan
Saute the onion 
Add the cauliflower and peppers
Add the stock ,peas,sweetcorn  and seasoning
Leave for 5-10minutes till cooked but not mushy
Add the dish and garnish with almonds and blueberries 
Enjoy

Put the florets into a food processor untill the mixture represents couscous texture
Add some olive oil to  a pan
Saute the onion
Add the cauliflower and peppers
Add the stock ,peas,sweetcorn and seasoning
Leave for 5-10minutes till cooked but not mushy
Add the dish and garnish with almonds and blueberries
Enjoy

Okra , Tomato and Lime Curry 
Serves 2 big 2 small 
Ingredients 
400g Okra ,sliced (fresh or frozen)
Onion, finely sliced 
Small piece Ginger ,peeled and grated
2 cloves Garlic , minced 
1/4 chopped Tin Tomatoes 
1 green Chilli
Handful Plum Tomatos, quartered 
1 tbsp Olive oil 
Lime, juiced and zest
2/3 Almonds ,chopped
Salt 
Peri Peri chilli flakes (i use Schwartz)
Ground Cumin

Ingredients 
I made a big batch of curry masala yesterday (I'll make a post so i just took a serving out however if doing from scratch add olive oil to a pan
Add sliced Onion and saute 
Add the Garlic, Ginger and tomatoes )
Add okra and cook for 5-7 minutes

Add spices and chill (just cut off end but keep an eye on it when eating so you don't eat it whole )

Been away for two weeks on holidays and its nice to be back to my kitchen (although i enjoyed the holidays ) 
This  new year for the first time I didn't make a resolution to lose weight or  to start eating healthy food  because I'm already doing that so here's to more of the same ..Happy New Year Everyone

Pepper and Chickpea Crumble with Garlic Mushrooms

Serves 2 adults 
Ingredients 
1 can Chickpeas , drained
1 Yellow Pepper, deseeded 
Olive oil spray
200g Button Mushrooms, sliced
1 tbsp Garlic paste 
1/4tsp Peri Peri flakes 
Pinch of Salt 
Handful of Radishes ,sliced into batons
1 tsp Tahini
Lime, juiced
1 tbsp Sriracha
Handful of pumpkin seeds

Method 
Add the pepper and Chickpeas to a blender and mix to a fine paste
Add some salt and peri peri flakes 
Add spray to a frying pan and add the mixture 
Mix untill dry and continue to cook until it's a biscuit crumb mixture 
In a seperate pan add spray then add mushrooms ,garlic paste and salt 
Mix the Tahini , Sriracha and Lime juice 
Add the Chickpea "crumble "to a plate then add the mushrooms, sprinkle the mushrooms and add the radishes and finally add the tahini sauce and the pumpkin seeds
Enjoy straight away

Spicy Turnip curry

4 Turnips ,peeled and cubed
1 Onion, sliced

1 piece ginger , grated
Olive oil
Salt 
Pepper
Ground Corainder
Ground Cumin
Garam Masala 
Peri peri flakes (i use Schwartz )
1 tbsp Tomato puree 
Chilli (to garnish)

Method

Once water has evaporated check turnips, they should be just cooked through
Garnish with chilli

30g Cocoa powder
3 medjoul dates,pitted and chopped ( i use @zaytoun_cic )
1/2 tin coconut milk (half fat)
Tin Chickpeas,drained
100g buckwheat flour
50g Maple syrup 
30g Dessicated coconut
Sweet Freedom Coconut choc shot (optional)

Method
Add all ingredients (except coconut into a food processor and blitz)
Add the coconut (leave a little for later)
Line a 20 cm square tin and pour in mixture
Sprinkle on some of the remaining coconut
Bake for 160 degrees for 30 minutes
Once cooled cut into 9 squares 
These cakes are not very sweet so could add some choc shot (coconut) after baking

Ingredients
50g medjoul dates
50g dried cranberries
20g cocao powder
10g almond butter
10g maple syrup 
20g choc shot orange spiced 
Method 
Add all ingredients except cranberries and blitz then add them and mix
Roll into 15 small balls

Lentil and coconut pancakes

1 cup urid daal ,pre soaked
1 onion,sliced
2 garlic cloves,minced
1 small piece ginger,grated
Olive oil

Seasoning
Salt
Pepper 
Fenugreek 
Turmeric 
Grated coconut (unsweetened)
Cumin seeds 
Method
Fry onion im oil till soft
Add daal ,garlic,ginger and water so that its covered (pre soaked) and cook till soft (i usally put mine in a pressure cooker for 12 minutes
Add spices and cook uncovered till a thick mixture
Add seasoning and allow to cool
Use a small frying pan and add some olive oil 
Add some of the mixture (should be thick) sprinkle coconut and cook for approx 2 minutes 
Place under grill 
I also added other toppings to the pancakes eg dairy free cheese or chopped nuts

1 tbsp tahini 
1 lemon, juiced
Handful of hazlenuts,chopped 
Ground cumin 
Ground corainder 
Tumeric powder
Onion granules
Garlic granules 
Paprika
Salt

Method
Soak the lentils for at least an hour
Place the turnip sprouts and seasoning  into a baking tray lined with greaseproof paper and place the oven for 20-25 minutes untill cooked 
Boil the lentils in salted water 
Mix the tahini,lemon juice ,lemon zest, garlic ,salt and pepper 
Add the turnip and sprouts to a bowl add the lentils and drizzle with the dressing .Finally sprinkle the hazlenuts and enjoy.

The dressing makes this salad and is so moreish

Daikin and ginger salmon fish cakes with garlic cassava chips

Really felt like some fish and chips so decided to make a healthy alternative 
Ingredients
2 salmon fillets
1 sweet potato 
A few tbsp ground almonds
Lime,grated
1/2 daikon, grated
Cassava, peeled
Olive oil
Small piece ginger ,grated 
Coriander ,chopped

Spices
Onion granules
Garlic granules
Salt
Pepper
Paprika
Soya sauce

Method

Cook the sweet potato ( i just pierce it and put into microwave for a few minutes) and scoop out flesh and allow to cool

Cut fish into small cubes and add to cooled sweet potato

Add the grated daikon,lime zest ,coriander and seasoning

Mix and shape into 5 equal sized cakes

Roll in the ground almonds

Daikin and ginger salmon fish cakes with garlic cassava chips

Really felt like some fish and chips so decided to make a healthy alternative
Ingredients
2 salmon fillets
1 sweet potato
A few tbsp ground almonds
Lime,grated
1/2 daikon, grated
Cassava, peeled
Olive oil
Small piece ginger ,grated
Coriander ,chopped

Spices
Onion granules
Garlic granules
Salt
Pepper
Paprika
Soya sauce

Method

Cook the sweet potato ( i just pierce it and put into microwave for a few minutes) and scoop out flesh and allow to cool

Cut fish into small cubes and add to cooled sweet potato

Add the grated daikon,lime zest ,coriander and seasoning

Mix and shape into 5 equal sized cakes

Roll in the ground almonds

Black chickpea and green bean cauliflower and basmati rice 
Ingredients

2 tins black chickpeas , drained 
400g green beans ,trimmed and chopped
Bay leaf
Cloves
Black cardamom
Cinnamon stick
Cumin seeds
Salt
Paprika
Chilli flakes
Olive oil

Method 
Soak the rice
Add olive oil to a pan and add the onions till golden brown 
Add all seasoning 
Add grean beans ,black chickpeas  and a little water and leave to simmer for 5 -10 minutes 
Add the rice (or cauliflower rice) add more water till it is about an inch above the rice
Allow to boil until a little water is left and cover the pan with a lid and allow to simmer for 10 minutes.( for cauliflower rice 5 minutes )
Switch off heat and dont open the oam for at least 15 minutes ( cauliflower rice about 5 minutes )

This was really popular with the kiddies , my toddler called it" jack and the beanstalk" rice . I made three variations of this one just with rice for thr hubby ,one with just cauliflower rice for me and then a combination for the little ones

Falafel parathas

Ingredients 
1 can chickpeas
Onion,sliced 
Egg to bind
250g wholemeal chapati flour
175 mls (approx) water
Pinch salt
3 tbsp olive oil

Spices
Salt
Pepper
Cumin 
Ground cumin
Ground corainder 
Peri peri flakes
Garlic granules

Method
Mix chapatti flour, salt ,olive oil and water untill a soft dough is formed 
Heat oil and add onion till cooked 
Add them to the drained chickpeas and add egg and spices 
Allow mixture to cool
Divide the dough into 16 small balls
Roll out two and add mixture in middle (if its too wet place on a kitchen towell untill more solid)
Add another round on top and fold over 
Roll out and then cook in tawa (or a frying pan ) with a little oil (2/3 minutes per side 
Place in foil and add a little soya spread if not eating straight away 
Serve with a spiced dairy free cucumber dip (dairy free yoghurt ,cucumber ,red onion, salt ,pepper and paprika)

Brown the onions and cook till translucent 
Add the chicken , garlic, ginger, tomatoes and seasoning

Serve with couscous or thick crusty bread

Lamb kitchiri 
Ingredients 
1 cup green lentils
2 cups basmati rice

1 small piece ginger , grated
750 boneless lean lamb ,cubed (can be left out for a plant based option )
Olive oil
1 Onion,sliced

Spices
Bay leaf
1 Cinnamon stick
1 Bay leaf
1 Black Cardomom
5 cloves
1tsp ground cumin
1tsp ground coriander 
1tsp cumin 
Method
Soak the rice and lentils in a pan
Brown onions in a little oil
In another pan brown the lamb 
Add to the onions ,garlic ,ginger ,add seasoning 
Add water till the meat is covered 
I cook mine in a pressure cooker (takes 12 minutes approx)
Once the meat is almost cooked  turn off
Place rice lentils and the meat in a pan ( i used a crockpot) .Add more water if needed till the water is an inch above the rice mixture
Cook and cover the pan so that the rice and lentils cook through
Serve with some crunchy fried onions ( i used ready made)

Method
Saute onion in a little oil

Bangers and butter bean mash with caramelised onions

Ingredients 
Tin of butter beans ,drained
Onion,sliced
Olive oil
1tbsp cornflour
Sea Salt
Ground Pepper
Garlic granules
Smoked paprika
Chicken sausages( i make my own) / vegan sausages ( i like tofurky @tofurky)
Spring onions

Chicken sausages
500g chicken breast mince
Garlic paste
Ginger paste 
Coriander leaves
Ground coriander

Shape into 6 sausage shapes then fry in a little oil, add some water and cover pan and allow to cook through.

Method
Drain the butterbeans and heat up with a little olive oil salt and garlic granules

Double olive and poppy loaf

Ingredients 
400 g strong white bread flour 
1 packet fast action yeast (7g)
1 tsp maple syrup
Approx 225 mls warm water 
200g Nocerella olives,pitted and cut 
200g Kalamata olives,pitted and cut
1 tsp garlic granules 
1 tsp mixed herbs
1 tsp dried basil
A pinch salt
2 tbsp Olive oil 
Poppy seeds

This recipe isnt quick but it is easy and delicious.

Method 
Add flour , yeast, salt,garlic granules,maple syrup,olive oil into a bowl and slowly add the water knead (mixer or hand) untill a soft dough that doesnt stick to the sides
Cover with a tea towel and leave in a warm place for an hour 
Mix in the olives and leave for another 30 minutes 
Turn out the dough onto a floured surface and shape into a roll 
Brush with some water and then sprinkle on some poppy seeds
Make a few cuts and cover again for another 45 minutes
Heat up the oven( 200 degrees )
Place the loaf in for approx 15-25 minutes till golden brown and a hollow sound when you tap underneath (i left mine for a few minutes too long so darkened on top)
Enjoy warm with some dairy free spread or cold 
Cut into slices ,approximately 10 large slices

180g Red lentil pasta

250g Durum pasta (optional)

Add seasoning when cooked

Red lentil and grean pea pasta with an arrabiata sauce

Serves 2 big and 2 small
Ingredients
180g Red lentil pasta
180g Green pea pasta
250g Durum pasta (optional)
Onion,sliced
2 red peppers, chopped
2 cloves garlic , minced
1 tin chopped tin tomatoes
500 g chicken breast, cut into strips (optional)
Dried basil
Salt
Herbs
Paprika
Olive oil

Method
Boil the pastas according to instructions

Light spring green and leek soup

This is a healthy light broth and could be even lighter if you substitute the noodles for courgetti. 
2 leeks ,finely sliced
2 spring onions,sliced 
200g spring greens , finely chopped
200g baby spinach , 
500 mls Vegetable stock (fresh or for ease stock cube)
1 tbsp Tomato puree
Olive oil 
2 cloves garlic ,crushed
400g tomatoes,chopped
1 small piece ginger , grated
Fresh chilli , desseded and chopped finely (leave out for baby/toddler )
Corainder
100g Rice noodles 
Spices 
Salt 
Pepper
Ground cumin
Ground coriander 
Cumin seeds
Paprika
Garlic granules 
Method
Boil kettle and place in a dish with the rice noodles and leave till almost cooked then wash in cool water to stop them cooking further
Heat up a pan with a little olive oil then add the sliced leeks ,saute then add the spring greens ,garlic ,stock,tomato puree, ginger,chilli, chopped tomatoes and seasoning
Add seasoning ,spinach ,spring onions,coriander and noodles
Serve immediately

Coconut and lime blondies with a coconut dip.

Ingredients 
80 g coconut flour
1 tsp baking powder
40g dessicated coconut
2 tbsp maple syrup(optional)
2 ripe bananas ,mashed
1 can chickpeas including aquafaba
150mls soya milk
2 limes,juiced and peel grated

Dip
Small tub Coconut yoghurt
40 g dessicated coconut 
1 Lime zest
1 banana,mashed
Maple syrup (to taste if want sweeter )

Method 
Combine ingredients for blondies except dessicated coconut .
Add in coconut and stir
Grease and line a 8x8 inch square tin 
Put ingredients into tin and level out.
Bake for 15 minutes at 180 degress
Allow to cool

Make the dip and enjoy with the cooled blondies

These blondies are not very sweet so if wanted adjust by adding in maple syrup.
Makes 18 mini blondies or 9 medium ones.
