There are not enough delicious words to describe this cajun chicken skillet! It is one of our favorite weeknight meals because 1. It's so freaking good 2. It's unbelievably easy 3. The leftovers absolutely rock for meal prep for easy lunches or dinners throughout the week. You can eat it straight up, or use some of these fun flex meal ideas:
Cajun chicken stuffed avocados
Cajun chicken salad 
Cajun chicken pasta salad
Cajun chicken stuffed baked potatoes 
Cajun chicken quesadillas .... and I could go on and on!

CAJUN CHICKEN SKILLET

Ingredients

2 lbs chicken breast boneless, skinless

2 bell peppers 1 red, 1 green

2 tbsp cajun seasoning

2 tbsp olive oil

3 cloves garlic pressed

1/4 cup green onion chopped

Instructions

1. Chop chicken into 1 in chunks. Place in a zip top bag with 1 tbsp of olive oil and cajun seasoning. Mix the chicken until all is coated with the seasoning. Let marinate, while you chop the bell pepper into bite sized pieces.

2. Heat remaining 1 tbsp of oil in a large skillet over high heat. Once hot, add the chicken and peppers to the skillet with the chicken in a single layer. If there is too much chicken for a single layer, work in batches. Let the chicken cook on the first side for 3-4 minutes without stirring, then use tongs to flip each piece over. Cook on the second side for 2 minutes, then add the garlic, stir well, and cook for 1 additional minute or until cooked through.

3. Once the chicken is done, remove the skillet from the heat, and top the chicken with the chopped green onion.

I was tagged to share 12 things about myself by the lovely and wonderful @brilliantlyketo. So here are a few 🌈 ☀️ I teach second grade and adore doing it—which is weird—because part of me was so nervous that I would never really like my job. ☀️ I have been married to my amazing partner for 5 years (together for 11) but if it weren’t him I don’t think I would have gotten married. ☀️I don’t think there is anything more exciting in the world than stepping on an airplane to go somewhere new. ☀️I love to work. If given the choice between working a job and living a life without a job I would choose the job. I get bored and restless very easily. ☀️ I always root for the underdog. I don’t like bullies and I don’t like teams that always win. If you are struggling—know that I’m rooting the loudest for you. ☀️ Some days I get really sad and I used to fight against them with all my might but I found that the harder I fought my feelings the bigger they were. Now I just let myself feel whatever I need to feel. I have very few truly sad days now. ☀️ I absolutely love children but I don’t want to have my own (neither does my husband) and this is hard for people to understand at times. ☀️I prefer the company of cats to any other animal and most grown adults. ☀️ I truly believe that laughter is a gift from God that helps almost every situation. I try to laugh every day. ☀️ I need to live somewhere where 80% of the weather involves sunshine otherwise I get massively depressed. ☀️ I have been on an epic adventure with my body and I’m finally starting to feel like we are walking together rather than brain in front of body or vice versa. Yoga helps with that. ☀️ I think social media can be used for good and for bad. I’ve used it for both. I’ve let it influence me on both sides. Keto Butter Chicken in top of zoodles and some spinach to top it off was dinner for my boys.  I been feeling sooo good on a 95% carnivorous diet. Later start at the gym than usual, I got stuck with a book and a pot of tea at home 😅😜
But I eventually walked to the gym, and once there trained handstands/headstands, bridge position, and core 💪🤸‍♀️ And afterwards I enjoyed a sunny walk home, without any jacket 👌☀️
It went really well today 😁 I managed to repeat my 'pr' of straightest arms with head support, getting closer to not needing head support to get up with straight arms, and I mostly find my center directly when getting into headstand without the wall 😎 And I can maintain longer 🤩
I also got a tip from a follower, @danijehtela, on how to try to position my neck during the bridge to help open up my chest, and I think it helped 😁

Men till slut kom jag iväg och promenerade till gymmet, och väl där tränade jag handstående/huvudstående, brygga, och core 💪🤸‍♀️ Och efteråt blev det en solig promenad hem, utan jacka 👌☀️
Det gick riktigt bra idag 😁 Jag lyckades upprepa mitt 'pr' med att komma upp med rakast armar med huvudstöd, jag är närmar mig att kunna komma upp med raka armar utan huvudstöd, och jag hittar balansen lättare utan väggen i huvudstående 😎 Och jag lyckas hålla den längre 🤩

Broke my fast today with two flaxseed crackers with brie and a big bowl of coffee  with MCT powder. The photo shows how light and fat the powder is. It will actually float on the coffee. Once stirred through it completely dissolves and it will look and taste  like coffee with heavy cream. Super delicious 👌☕

Once stirred through it completely dissolves and it will look and taste like coffee with heavy cream. Super delicious 👌☕

Tired of seeing my baked eggs yet?  Too bad.  They are pretty much the only thing I can swallow.  Advil doesn’t hold a candle to this insane sore throat.  Headed to Urgent Care this morning for a strep test. 
Nobody ever wants strep...until your throat hurts so badly that you can’t swallow and find yourself popping 800mg if Advil every 6 hours on the dot.

It’s spring and that means it’s time for frozen drinks again😆 This is pretty much my jam from spring until ❄️ Matcha Frappachino!! I used to get a matcha frappachino everyday when I was young and naive and had no idea I was drinking the carbs and calories of an entire family! I am pretty sure if I had one now my teeth would instantly get cavities. Because not only was it already full of sugar, I loaded it with caramel😵😫So needless to say that not an option any more!! Instead I make this DELICIOUS, creamy Caramel Matcha Frappachino!!! Full of good fats, matcha, and NO SUGAR! so this week I will be making a different keto Frappachino each day! Makes 1 BIG Frappachino
332 Calories, 29g Fat, 2g Carbs, 4.9g Protein
2 Scoops (20g) Matcha
1/2 Avocado 
12oz Unsweetened Almond Milk

Dnes máme oba recepty do kulata 😅. Ráno jablečný tvaroh, teď pokus o pizzu 🍕Stále jsem nedokoupila mandlovou mouku, a psyllium ani jinou další mouku jsem používat nechtěla✔️. A tak vznikla tato rychlovka, která se hodí i do pracovní krabičky 🧳, protože chutná skvěle i za studena 🥶😅.
Těsto je pouze ze 2️⃣ingrediencí a obložit si ho můžete tím, co máte v lednici nebo na co máte chuť 😋.

24 hour CGM graph of my experiment. NO REGULAR/FAST ACTING INSULIN! I started off the day with a cup of coffee getting off shift and going to the gym. I went to help my grandpa do some yard work. I came home to eat lunch and mow my yard. I showered and relaxed for a bit before going back to the gym to workout. I came back home to clean house. I ate dinner, watch March Madness, and went to bed. I stayed active all day long that my long acting and activity helped to cover all of my meals. I didn't even hit above 105. Every Saturday morning, I go to the gym religiously.  I rarely miss a Saturday.  Well, Friday night I ended up not getting home until 3 am.... this would have been a perfect time for me to say “eff it, I’m too tired” or “I’ll go later” but I knew that if I didn’t get my butt out of bed and get to the gym I wouldn’t be working out.  Did I want to go to the gym with only a few hours of sleep, NOPE.  On top of being tired I was super sore from my work out the previous day.  The gym didn’t sound fun. I pretty much had every excuse I could think of not to go.  I was not motivated.

Im going to give you some advice that I have learned over the last 3 years.  If you are relying solely on motivation to help you reach your goal,  you are setting yourself up for failure. Motivation is not enough to succeed. You might be motivated now but what are you going to do when you’re not motivated? When you are tired and struggle just to drag your tired ass out of bed, what do you do then? The answer is, you don’t wait for motivation.  You just do what you have to do.  You become dedicated.  Motivation is an emotion, dedication is a characteristic. Being dedicated means that no mater what is going on in your life your plan never waivers.  True dedication means making a decision and not letting any excuse get in your way!

Happy Sunday with low carb mug cakes 🍰

Makes 2 servings
Recipe:
6 tbsp of almond flour
1.5 tbsp of coconut flour
2 tbsp of stevia or erythritol
2 tbsp of butter 
1/2 tsp cinnamon 
1 egg
1/4 tsp baking powder 
Melt 1 tbsp of butter in each mug. In a bowl mix all the other ingredients. Fill each mug with the mixture. 
Pop them into the microwave for 3-5 minutes and then let them cool. 
Remove the cake from the mug and slice it in 3 equal parts. I spread cream cheese and sliced strawberries 🍓 for the filling.

Receita:
6 colheres de sopa de farinha de amêndoa
1,5 colheres de sopa de farinha de coco
2 colheres de sopa de stevia ou eritritol
2 colheres de sopa de manteiga
1/2 colher de chá de canela
1 ovo
1/4 colher de chá de fermento em pó

Derreta 1 colher de sopa de manteiga em cada caneca. Numa tigela misture todos os outros ingredientes. Encha cada caneca com a mistura.
Coloque-os no microondas por 3-5 minutos e deixe esfriar.
Retire o bolo da caneca e corte-o em 3 partes iguais. Espalhei queijo creme e morangos fatiados 🍓 para o recheio.

Recipe:
6 tbsp of almond flour
1.5 tbsp of coconut flour
2 tbsp of stevia or erythritol
2 tbsp of butter
1/2 tsp cinnamon
1 egg
1/4 tsp baking powder
Melt 1 tbsp of butter in each mug. In a bowl mix all the other ingredients. Fill each mug with the mixture.
Pop them into the microwave for 3-5 minutes and then let them cool.
Remove the cake from the mug and slice it in 3 equal parts. I spread cream cheese and sliced strawberries 🍓 for the filling.
