NO-bake NO-dairy NO- “sugar” chocolate layered cake😍 recipe

1L of soy milk - and a lil bit more to soak the oat cakes for the oat layers
75g of coconut sugar
Oat cakes
300g of dark chocolate
 A lil bit of vanilla extract
4 yolks - 💚vegan option: whisking about 28g of chia seeds with water)
Just a teaspoon of corn starch

Heat up the milk on the stove, add 4 yolks, coconut sugar and the vanilla extract, meanwhile put the 300g of 🍫 into the microwave and then add to the mixture. The lil tiny bit of corn starch will be added  at the end to have a more dense composition. Wait for it to cool down and then on a bowl add a layer of chocolate, and subsequently a layer of oat cakes (and so on) Before putting the oat cakes in, dip them into some soy milk until they are soft. After you’re done doing the cake, shove it in the fridge for a few hours before eating it 🇪🇸

INGREDIENTS
Yellow Curry Broth
1 tablespoon vegetable or olive oil
1 tablespoon minced ginger (about a 1-inch piece of ginger)
4 garlic cloves, minced
2 teaspoons yellow curry powder (mild spice)
6 cups vegetable broth*
1/2 teaspoon salt, add more if necessary
3/4 cup (175ml) full-fat coconut milk (can sub with low-fat coconut milk)

Tofu Wontons
about 45 to 50 square dumpling wrappers
1 package of firm tofu (I used a 14-ounce package)
1 1/2 tablespoons vegetable or olive oil
2 tablespoons minced ginger
1 tablespoon minced garlic
3 cups shredded green cabbage (ensure they are no longer than 1-inch pieces)
1 large carrot, grated (about 1 1/4 cups)
pinch of salt
4 scallions, sliced
Optional Toppings
chili oil
black sesame seeds

INSTRUCTIONS
Prepare the Broth: I like preparing the curry broth before making the dumplings because this allows more time for the flavors of the broth to develop.

Heat the 1 tablespoon of oil in a pot. Add the minced ginger and garlic and cook for 1 minute, stirring constantly. Add the curry powder and stir to coat the spices.
Add the vegetable broth and 1/2 teaspoon salt, cover the pot, and bring the broth to boil. Reduce the heat to a simmer and swirl in the coconut milk. Let the broth simmer for about 10 minutes, covered. Turn off the heat and let the broth sit on the stove, covered, as you make the dumplings.
Make the Dumplings
Drain the tofu and wrap the tofu around a layer of paper towels. Press the tofu by placing the tofu block on a plate and weighing it down with a stack of plates. Let it sit for 15 to 20 minutes. Remove the towels and cut the tofu into small 1/4-inch cubes.
Heat 1 1/2 tablespoons of oil in a large pan.

I added garlic & onion powder, nooch (nutritional yeast), salt and parsley to my cheese mixture while it #ferments . This is such a basic hippy recipe, and it's delicious!

So I enjoyed my little day trip to Scarbados on my own today. I made the effort to go well out of my way and get vegan battered sausage and chips! 😍😍 But I do kind of regret the decision because it took me so far away from where I wanted to be (especially with me not being very good with directions 😂) and my day of just chilling went out of the window as I did 19,000 steps altogether hahaha! In my head I imagined sitting on the beach with a book but I did get to walk along both North Bay and South Bay, see some pretty sights and watch the waves. 🌊

I’m so sleepy now so fingers crossed I can manage an early night for once! 😁 Would definitely recommend having time to yourself like this if you can and just have some time with your own thoughts. I feel really relaxed for it this evening. Hope everyone has a great weekend! 💕

It’s Friday! Who wants a treat?! Here are 4 ice creams I’ve tried recently. They were ALL good. But I gave them a ranking. All can be enjoyed well! •

3. @sodelicious_ca salted caramel comes in third. It was good, but I didn’t love the cashew bits in it. Again, a totally personal preference. But the caramel and saltiness were an incredible flavour. •
4. @halotopcreamery birthday cake flavour rounds out the top. Yes, it’s still amazing. I just find vanilla ice creams are never a match for the real deal no matter how good they are. But if you have a craving for vanilla and you can’t have the real thing, this will do you well! • •

1.5 cup of any mushrooms- chestnut, white, shiitake, field etc 
1tsp grated ginger
2 cups unsweetened soy milk
1 bay leaf 
1 tbsp miso paste 
Sauté the onion in a small amount of water (2-3tbsp) add chopped mushrooms and sauté until soft. 
Add in ginger, a bay leaf and soy milk and miso paste. 
Bring to a simmer for a few minutes.
Add a large handful of kale and turn off heat. 
Blend with a hand blender or liquidiser.

To give it my own flair and add a little extra sauce. Sauteed red onion, garlic, green peas, white beech mushrooms, spinach with @earthbalance vegan butter and Italian seasonings. Used a lentil pasta that is lower in calories and rich in protein and fiber. After all prepped, I layered it into a circular baking dish, lined with foil, baked at *370 for 25-27 minutes. This is easily becoming one of my favorite dishes to make. Love a great Italian style dinner.

Det här är andra gången i mitt liv jag använder linser i min matlagning. 
Snart kommer det att vara gång nr 100, så bra blev det 😅. Jag tänkte att jag tillagar det på ungefär samma sätt som när jag gör bolognese med färs. 
Det kan ju inte bli annat än succé 😉 ☆4 port ☆
1 burk krossade tomater 
1 gul lök 
1 vitlöksklyfta 
2 dl röda linser
5 dl vatten 
1 msk grönsaksbuljong 
1 msk sirap 
3 msk tomatpuré 
1/2 dl rödvin (matlagningsvin)

Ok, we're about to take the simplicity of aglio olio (garlic, oil) from the most basic home cooking to the heights of restaurant haute cuisine. All with one ingredient...bottarga. Referred to by Italians as poor man's caviar, bottarga is dried, cured fish roe, usually of mullet or tuna. It has the subtle taste of the sea.  You can buy it as a bar/filet, which you'll grate onto your pasta, or in a jar, pre-grated. It's hard to choose which is better (honestly, you really can't go wrong with either). Impress your friends/significant other with this dish - that you know was easy to whip up but they'll never be the wiser 😉⁣⠀

Oh, I can’t tell you...this was delicious! I freestyled a curry. In a hot frying pan, melt about 3/4 tablespoons coconut oil, and add a pinch of asfoedita, 1/2 teaspoon of ground coriander, cumin seeds, mustard seeds and about 10 curry leaves. Stir around, and when the seeds begin to pop, add a thumb each of fresh tumeric and ginger, 2 red chillies, 3 cloves of garlic pounded in a pestle and mortar with a pinch of salt, and a sliced spring onion. Stir around, turn down the heat and add half a chopped aubergine. Season with salt and pepper. Keep stirring for a bit, then put a lid on so the aubergine really cooks well. After 5 mins or so, add 2 cherry tomatoes chopped up, half a chopped courgette, a handful of chopped fresh coriander and a good splash of coconut milk (I used the carton, not can type, but any is good). Cook with a lid on for maybe 10 mins. Once the aubergine in soft, add a good handful of kale. Lid on, cook again. 5 mins. Add a squeeze of lime, test the seasoning, and serve with more fresh coriander and coconut yoghurt. I ate it all.

You guys, can I gush for a moment about my girls? They love to plan surprises and serve others through food. All of them are home from school today, again, because they have conferences. I had two meetings this morning and came home to this lovely surprise at “The Cooper Cafe”. It was fit with a menu, a PowerPoint about the cafe, lovely music, and even better company. I love these girls SO much and their hearts to love and serve. They are truly amazing. My heart and belly are both very full ☺️Let me be clear though, my girls aren’t perfect by any stretch. Our life and our home aren’t perfect either, it’s all as messy as the last picture. I wouldn’t have it any other way. We are real, we struggle, we forgive, we have fun, we are silly, we love adventure, we eat well 😉, and we love each other fiercely. Vegan & Paleo Superfood Ice Cream Bars by @feastingonfruit. Recipe in the video and here:
Crust
1 cup (~180g) pitted medjool dates
2/3 cup water
1/2 cup (60g) coconut flour
1/4 cup (20g) cacao powder
1/2 tsp salt
Ice Cream
2 cups (240g) raw cashews
1 cup (240g) coconut milk*
1/4 cup (80g) maple syrup
1/2-1 tsp spirulina
1/2-1 tsp turmeric
1/2 cup blueberries, pureed
Cover the cashews with warm water and soak for at least 30 minutes (if you don’t have a high speed blender, you will need to soak them for at least a few hours).
Blend the dates and water.
In a bowl, combine the coconut flour, cacao powder, and salt. Stir.
Add the date paste and mix to form a sticky dough. If it’s too dry/crumbly add a few tablespoons of water.
Press into the bottom of a pan/dish lined with parchment paper or plastic wrap (I used a 9×6″ tupperware). Set aside.
Blend the (soaked and drained) cashews, milk, and maple syrup until very smooth and creamy.
Divide into 3 bowls. Mix the spirulina into one, turmeric into another, and blueberry puree into the last. Add more/less to reach desired color.
Spoon/dollop the colors on top of the crust and swirl with the back of a spoon or a straw.
Freeze overnight.
Once frozen, cut into bars and top with melted chocolate if desired.
