Roasted potato salad with spirulina-based dressing 🥔🥑🥔🥑
Roast potatoes in olive oil seasoned with turmeric, paprika, ginger powder, dried oregano, basil, rosemary, and cumin in 375° oven until golden. While potatoes are roasting prepare your salad bowl with diced up raw mushroom, raw cauliflower, celery, yellow and red bell peppers, carrots, cucumber, spinach, avocado, and cilantro! For the dressing, mix Dijon mustard, a tablespoon of apple cider vinegar, mustard seeds, maple syrup, dash of salt, olive oil, and one teaspoon of spirulina. Toss everything together and enjoy!
