Another easy 10 minute lunch! 😍😋Baked wild salmon seasoned with olive oil, lemon and ground black pepper with a fried egg cooked in avocado oil, sautéed garlic mushrooms, spinach and half an avocado. I cooked the egg, spinach and mushrooms one after another in a non stick pan (no need to dirty up more dishes) while I baked the salmon on 400 for 10 minutes in my toaster oven. Easy peasy nourishing and delicious! Hope you’re having a great day!⁣

Need a Sunday treat to satisfy your sweet tooth?

Sundays are the perfect day for baking, am I right? I have a mean sweet tooth but refined sugar and even cane sugar are a major trigger for my headaches. Sometimes even my preferred natural sweeteners such as pure maple syrup and coconut sugar lead to a headache if I am eating too much of them.

I love using xylitol because despite its name it is a natural sugar. It has very little impact on blood sugar levels and rarely triggers a headache for me. But xylitol cannot be digested by dogs and is in fact VERY dangerous to their health - potentially fatal! Because of my sweet little Kali, I decided not to take any chances and have stopped using this sweetener.

That’s why I am excited to use erythritol by @livenaturalnow because they are one of the only companies in Canada that have a 100% pure variety. Like xylitol, erythritol is a natural sweetener with a low glycemic impact that can be used to substitute sugar 1:1 in recipes AND is unlikely to trigger a headache. (Keep in mind, this product is derived from non-GMO corn, if corn is a headache trigger for you.) I created this apple blueberry coffee cake for my Sunday treat and I want to share it with you:
> 1 cup organic light spelt flour
> 1 cup organic all-purpose unbleached white flour
> ½ cup erythritol
> 1 tsp baking powder
> 1 tsp baking soda
> 1 tbsp cinnamon (I use Ceylon)
> ¼ tsp pink salt
> ¾ cup avocado oil
> 1 tbsp pure vanilla
> 1 tsp apple cider vinegar
> 3 organic gala apples
> 1 cup wild or organic blueberries

1. Preheat oven to 350F and line a 9inch pan with parchment
2. Mix all wet ingredients except blueberries
3. In a separate bowl, mix dry ingredients by whisking with a fork
4. Add dry ingredients to wet, stir twice 
5. Add blueberries and gently mix until incorporated but not overworked
6. Pour batter into pan
7. Bake for 35-40 minutes until middle is set and slightly firm
8. If not fully cooked, bake for another 5 minutes until set and golden on top

I've had quite a few comments lately from angry vegans either insulting my children or calling me a horrible mother - for feeding them (organic, pasture raised) bacon. Feel free to say what you want to/about me, but my kids are off limits. I will and do go full tiger mama and it ain't pretty. ⁣

Here's the thing about bacon: about 50% of it is made up of monounsaturated fat - the same fat that makes olive oil so healthy. It also contains saturated fat. The kicker: there is no legitimate evidence that saturated fat causes heart disease or has much of an effect of blood lipid levels. On top of that, our cells and brains are made up of saturated fat!⁣

So I'm going to keep eating my pasture raised, organic bacon. Try it with the BLT cauliflower risotto. Insanely delicious! Link in bio!⁣

What about some #bread cooked at home? It’s #glutenfree and very delicious. I didn’t bake it from scratch, because I had some ready mix. 
So the ingredients are:
- 280g Grass Roots Bakery gluten free brown bread mix,
- 1 egg,
- 1 spoon of olive oil,
- 1/2 tea spoon of #bluespirulina from @rawnice for the blue color
- 1/2 tea spoon of #pinkpitaya for red color.
- 1 scoop vegan protein powder.
It came out very delicious.

This tiny closet kitchen has been a CHALLENGE (initially no stove, no oven & no fridge), to say the least, especially for someone who loves to cook as much as I do. ⁣

None the less I share (wires sticking out in all), to show you the real me in my space making it work. It's funny because as the years have gone by, this space has slowly become one of my favorite spots in my place. The other day I found myself with my laptop on a shelf watching Netflix and sipping soup out of a mug while sitting on the counter (don’t judge). ⁣

This tiny closet kitchen has been a CHALLENGE (initially no stove, no oven & no fridge), to say the least, especially for someone who loves to cook as much as I do. ⁣

Banana oat flour waffles with banana, blueberries, chopped almonds and a drizzle of maple syrup 🍌 The recipe is super easy: 1 mashed banana mixed with 150 plant milk or water, 100g oats processed into flour, 1 teaspoon cinnamon and 1/2 teaspoon baking powder. Bake for 3-4 minutes or depending on your waffle maker.

Ingredients

125 g rolled oats
200 ml plant-based milk of your choice 
3 tbsp maple syrup ⎪more to make it sweeter
1 tbsp apple cider vinegar
1 tsp baking powder
Instructions
Place the oats and almonds in your food processor. Pulse until it reached a flour like texture.
In a bowl combine the flour with baking powder.
In another bowl mix together all the wet ingredients.
Combine together and let the batter sit for about ten minutes. This is important so that the batter reaches the right consistency.

I’m curious what you all think of this gorgeous Dragon fruit? I spent $7.50 on this the other day and I wanted to love it..... but, I don’t.🤷🏼‍♀️

Love the fact that is beautiful and so easy to eat but man, I just didn’t fall in love. I agree with statements that it’s between a kiwi and a pear texture wise, but not at all in flavor which I found to be lacking. I probably won’t be buying this again unless it’s on super sale.

So: it begins like any other designer toast, with crispy gluten free Udis, toasted twice for good measure, slathered with organic honey, and topped with blueberries (yes, the smushed ones at the back of your fridge will work just fine), with a “dash” of cinnamon because it’s fun to say and fun to do. (It’s recommended that you channel your inner Antoni Porowski while making this.)
