SAUSAGES!!!!!!! Can I actually just give myself a pat on the back for how colourful this dish turned out please?! 😂 I used the Lincolnshire from the Althams 48 piece sausage selection, which features in tomorrow’s The Weekend Kitchen, to make a sausage and lentil casserole. 🐞5 things I learned from losing 50kg.

🐞Friday afternoon, sitting in the car. 2 hours early to pick up the kiddo from school. Cloudy day, broke fast extra early today cos I walked past a stall that sold pepper buns. Wasn’t fantastic, but no regrets. Indulged my curiosity.

🐞I feel like a completely different person now compared to who I was 50kg heavier. Not physically, physically I actually don’t feel that much different. I mean yeah, I wear smaller sized clothes but I don’t really ‘feel’ it.
-
🐞Mentally though, it’s feels super different. The way I view food, the way I’m less pessimistic, they way Im’ a lot less anxious than before. The anxiety and pessimism isn’t gone completely, but it’s noticeably less.

🐞In a reflecting mood, here’s 3 things I’ve learned over the journey.

🐞1) People talk. It doesn’t matter where you are in your journey, someone’s gonna disagree. When I was 123.3kg, I was too fat. The moment I hit 99kg, I was too skinny. Nobody’s voice matters more than your own. I know it’s super hard to hear your own voice when other’s always sound louder, but your voice is the only one that matters. The only one. Not mom’s, not dad’s, not friends, just yours.

🐞2) There’s always an alternative. Don’t like brown rice? Eat white rice. Don’t like oats? Eat cereal. Don’t like spaghetti? There’s bread. There’s no one way to lose weight. There’s.a million ways to do it. Figure out the one you like best. That’s always the best one.

🐞3) It takes a long time. How ever long you think your journey’s gonna take you? Triple it. No quadruple it. Sustainable weight loss takes time. There’s no way around it. Recognizing that makes the process feel faster, but it still takes a long, long, long, long time.

By looking at the science we can see that natural yogurt has a much more impressive nutrient profile than coconut yogurt. This is largely due to its calcium content and containing all essential amino acids. ⁣

Oh but it gets better. ⁣

What makes natural yogurt a superstar food is its ability to act as a probiotic. Probiotic foods populate the gut with good bacterial species. Keeping our gut healthy with ‘good’ bacteria has been found to contribute to better overall health. 🦠🦠⁣

Other probiotic foods include sauerkraut, pickles, kombucha and miso. If you don’t like or eat yogurt try to incorporate some of these foods into your diet daily- your gut will love you for it ! ⁣

Te dejo otra idea de comida saludable apta para grandes y pequeños 👨‍👩‍👧‍👦 Una comida sana y súper fácil de preparar, tan solo necesitas 15”o 20” para prepararte este delicioso plato saludable. Así que el tiempo no es escusa🤷‍♀️🤷‍♀️quizá las ganas de empezar a cuidarte más??? De verdad que vale la pena, ganas en salud y bienestar y si tienes niños en casa 🤗🤗aún más, les dejas el ejemplo de una alimentación saludable que durará toda la vida 😍😍😍recuerda que los niños aprenden por IMITACIÓN 😉
Y pues comimos:
Pechuga de pollo con patata, Brócoli con zanahorias al vapor.. y cómo les comentaba por stories aquí también tienen la opción de hacer las verduras con la patata al vapor en la misma olla  y mientras  se cocinan, te preparas las pechugas a la plancha con un poco de aceite de oliva virgen extra y las especias que más les guste 🤷‍♀️más fácil imposible. 
Ahhh y mientras se cocinaba todo pues aproveche para hacer una ensalada de espinacas, rábanos, almendras laminadas y semillas de girasol con vinagre de manzana y aceite de oliva virgen extra.

BERRY FRENCH TOAST CUPS
Servings: 12 muffins
INGREDIENTS 
4 eggs
1 cup almond milk 
1 tablespoon vanilla
2 teaspoons cinnamon
12 slices whole grain bread
½ cup strawberries, quartered
½ cup blueberries
½ cup raspberries, halved
½ cup blackberries, halved
Filling:
2 cups plain Greek yogurt
¼ cup maple syrup
½ teaspoon cinnamon
PREPARATION
1. Preheat oven to 350˚F/180˚C. 
2. Combine eggs, milk, vanilla, and cinnamon in a large bowl. 
3. Dip bread slices into egg mixture and gently press into muffin tin coated with cooking spray. 
4. Bake for 20-25 minutes or until golden brown. 
5. Prepare filling and fruit slices while cups bake. 
6. Fill up the slices with the filling and fruit. 
7. Serve with a drizzle of maple syrup.

▶️INGREDIENTS
1 15 oz can chickpeas 425 g, 1 ½ cup soaked chickpeas if starting from dry, drained and rinsed
1 Tbsp olive oil 15 mL
1 Tbsp paprika* 7 g
1 tsp ground black pepper 3 g
1/2 tsp cayenne pepper 1.5 g
1/4 tsp salt 1.5 g
4 pita flatbreads
1 cup tzatziki (click for recipe) 250 g, use ⅓ recipe if you’re just making it for these gyros
1/4 red onion cut into strips
2 lettuce leaves roughly chopped
1 tomato sliced
▶️INSTRUCTIONS
Prep: Preheat oven to 400 degrees F (204 C). Pat dry chickpeas with paper towel, removing any skins that may come off. Gently toss chickpeas with oil, paprika, black pepper, cayenne pepper, and salt.

Roast: Spread chickpeas onto a greased rimmed baking sheet and roast for about 20 minutes, until lightly browned but not hard.

Assemble: Spread some tzatziki onto one side of the pita, then sprinkle in ¼ of the chickpeas and add veggies. Fold in half and enjoy!

I’m afraid I don’t really measure anything, so I’m giving rough estimates.

Ingredients:
• 1/2 a pumpkin 🎃 • 3 carrots, thickly sliced, otherwise they will burn 🥕
• 1 - 2 cups of baby spinach
• 1 400 g can diced tomatoes with herbs 🌿 • 1 red capsicum sliced
• 1 cup cherry tomatoes 🍅 • 1 red onion chopped • 1 broccoli chopped into florets 🥦
• 1 kumara (sweet potato) cut into chunks
• 1 tablespoon of dried mixed herbs • 1/4 tsp Allspice
• Crushed garlic
• Butter for sauce and pumpkin 🎃 • Olive oil for carrots and kumara
• Salt and Pepper to taste 🧂
• Ingredients for cheese sauce (butter, flour, milk and cheese)
• 1 packet of wholemeal lasagne sheets (you could also use gluten free)

Method:
• First I put butter and crushed garlic into the half pumpkin and roasted it together with the kumara and carrots, both which I covered in olive oil, for 50 minutes at 180 degrees Celsius.
• Make a cheese sauce to cover all of the layers. I used about 1 L milk 🥛 and LOTS of grated Colby cheese 🧀 • Add the dried mixed herbs 🌿, a heaped tsp of crushed garlic plus salt and ground black pepper to the sauce. This really made a difference to the end product 😋
• Lightly blanch the broccoli, so it is still crunchy🥦 • Remove the roast vegetables. Scoop out the flesh of the pumpkin and mash it slightly. Add the chopped onion, kumara and carrots and lightly mix these together together with the Allspice. 
To Assemble:
• In a large ovenproof dish, first spread a thin layer of the cheese sauce
• Layer lasagne sheets
• Spread the pumpkin vegetable mix over it
• Pour the can of diced tomatoes over this
• Place another layer of lasagne sheets
• Another layer of cheese sauce (keep lots of sauce for the end)
• Then create the next vegetable layer by spreading the capsicum, spinach, cherry tomatoes,broccoli florets
• Last layer of lasagne sheets
• Cover fully with the cheese sauce and sprinkle with grated cheese 🧀 
Bake uncovered in oven at 180 degrees Celsius until pasta is tender.

Serve with salad 🥗 and crusty bread 🥖  and Enjoy😋

➡️Baked Pineapple Salmon
▶️Ingredients:
Cooking spray, for pan
8 Pineapple rings, fresh or canned 
1 Large salmon fillet (about 3 lbs.) Kosher salt
Freshly ground black pepper
3 tbsp. melted butter
3 tbsp. sweet chili sauce
2 tbsp. freshly chopped cilantro
3 Garlic cloves, minced
2 tsp. freshly grated ginger
2 tsp. toasted sesame oil
1/2 tsp. crushed red pepper flakes
Toasted sesame seeds, for garnish
Thinly sliced green onions, for garnish
Lime wedges, for serving
▶️Instructions:
1.Preheat oven to 350°. Line a large rimmed baking sheet with foil and grease with cooking spray. To the center of the foil, lay pineapple slices in an even layer.

2.Season both sides of the salmon with salt and pepper and place on top of pineapple slices.

3.In a small bowl, whisk together butter, chili sauce, cilantro, garlic, ginger, sesame oil, and red pepper flakes. Brush all over salmon filet.

4.Bake until the salmon is cooked through, about 25 minutes. Switch the oven to broil, and broil for 2 minutes, or until fish is slightly golden. Garnish with sesame seeds and green onions and serve with lime wedges.

I love my instant pot for many reasons but probably my favorite feature is the fact that I can steam almost any vegetable to perfection in it. Now this does come with a caveat because I have definitely had my fair share of insta-mush instead of perfectly steamed. But we’re all here to learn and grow into confident cooks in the kitchen. You don’t become Julia Child overnight.⠀

The biggest thing to note with artichokes is the size difference. I used medium sized chokes that were a little smaller than a softball. If yours are smaller, decrease the time. If yours are bigger, you may need to add a few more minutes. It’s always best to err on the side of caution and undercook because you can always pop them back in but you can’t undo the mush. ⠀

So here’s the details:⠀
Trim the tops of your artichokes, about 1 inch down from the top. Clip the edges of the leaves (you can skip this step if pressed for time but I don’t like the pokey ends). Cut the bottom of the stem enough so that it will sit somewhat straight up in the steamer basket. Place your artichokes in a steamer basket in the instant pot along with 1 cup of water (or whatever the minimum requirement for water is for your pressure cooker - this may vary based on models and sizes so be sure to check!). Set for manual high pressure for 10 minutes and do a quick release once the time is up. Carefully remove and check for doneness based on ease of pulling the leaves off. ⠀

If you want to get fancy you can flavor the water with lemon or garlic and this will infuse into the artichokes. I like to keep them plain and then serve with a butter sauce (literally just butter and minced garlic).⠀

You don’t become Julia Child overnight.⠀

The biggest thing to note with artichokes is the size difference. I used medium sized chokes that were a little smaller than a softball. If yours are smaller, decrease the time. If yours are bigger, you may need to add a few more minutes. It’s always best to err on the side of caution and undercook because you can always pop them back in but you can’t undo the mush. ⠀

So here’s the details:⠀
Trim the tops of your artichokes, about 1 inch down from the top. Clip the edges of the leaves (you can skip this step if pressed for time but I don’t like the pokey ends). Cut the bottom of the stem enough so that it will sit somewhat straight up in the steamer basket. Place your artichokes in a steamer basket in the instant pot along with 1 cup of water (or whatever the minimum requirement for water is for your pressure cooker - this may vary based on models and sizes so be sure to check!). Set for manual high pressure for 10 minutes and do a quick release once the time is up. Carefully remove and check for doneness based on ease of pulling the leaves off. ⠀

If you want to get fancy you can flavor the water with lemon or garlic and this will infuse into the artichokes. I like to keep them plain and then serve with a butter sauce (literally just butter and minced garlic).⠀

🔷You guys! 🔷 🔷I’ve been using the nutritional cleansing system I talk about all the time for over a year now (crazy I know) and here is what I know for sure :

CREAMY ONE-POT SPINACH SHRIMP PASTA😍❤️ Servings: 4
INGREDIENTS1 pound shrimp, peeled and deveined1 tablespoon olive oil1 tablespoon butter2 cloves garlic, minced1 teaspoon salt½ teaspoon pepper1½ cup milk1½ cups chicken broth8 ounces fettuccine pasta4 cups spinach1 teaspoon salt½ teaspoon pepper½ teaspoon Italian seasoning¼ cup parmesan cheese, grated
PREPARATIONIn a heated pot, melt butter and olive oil. Add garlic and shrimp, seasoning with salt and pepper. Cook until shrimp is pink, then put aside.In the same pot, add milk, broth, and pasta.Cook for 10 minutes, stirring occasionally, so that the pasta does not stick to each other.Once pasta is al dente, add in spinach, salt, pepper, seasoning, and cheese, and mix until spinach is wilted and everything is coated in the sauce. Add the shrimp back in and give it a stir until fully incorporated.Serve with some extra parmesan cheese, if desired, and enjoy!

Para esos días en los que no hay mucho tiempo de cocinar os dejo esta receta super fácil, deliciosa y sobre todo rápida de preparar.

4 personas / 20 minutos / Fácil

Ingredientes:
800 g. caballa en conserva (se puede sustituir por atún)
3 cdas. aceite de oliva
2 cebollas grandes en tiras
3 dientes de ajo laminados
1/2 tz. crema de ají
1/2 tz. caldo de pescado
1/2 tz. crema de leche (puede sustituirse por 2 rebanadas de pan de molde)
1/2 tz. queso parmesano
1 cdta. Sal de Maras “Estilo Peruano” Natural Crystal Salt de @lauriepujalt

12 papas amarillas sancochadas
4 huevos duros
1 tz. aceitunas negras deshuesadas

Elaboración:  En una olla a fuego medio calentar el aceite, dorar el ajo durante un minuto y seguidamente incorporar la cebolla. Sazonar con la Sal de Maras “Estilo Peruano” Natural Crystal Salt y dejar cocinar durante cinco minutos hasta que la cebolla esté blanda. Añadir la crema de ají amarillo y cocinar durante cuatro minutos más, seguidamente incorporar el caldo de pescado junto con la crema de leche, mezclar bien y dejar cocinar durante 6 minutos hasta que espese. Finalmente incorporar la caballa previamente escurrida junto con el queso parmesano, mezclar y servir junto con las papas, el huevo duro y las aceitunas.
