Pooris in a long time ! No hidden fact that the 👭 love their green puris. It is the long weekend here and I have a whole lot of green veggies for the week. Combined three different varieties this time around for the poori dough. They loved it. 
It was a win-win day for them. A fab lunch on demand 👆🏻 followed by a pizza and cake evening at their favorite friends’ (twins) birthday. 
Sharing a quick recipe below of both the poori dough (atta) and Heeng wali Aloo ki Sabji (potato curry) which goes so well with pooris.

Green Poori Dough - Recipe
I took a small bunch each of fresh Bathua, Methi and Palak leaves. Cleaned and washed them well. Roughly chopped them. In a deep pan, heat 1 tbsp oil. Add 1/4 tsp each of ajwain, jeera and saunf. Let them splutter and add in the chopped leaves. Mix well. Add a green chili, a small piece of ginger and 1 tsp salt. Stir well and sauté for 3-4 minutes only. Let this cool, and coarsely blend without water. Mix into atta (whole wheat flour) and knead into a firm poori dough.

▪️Ghee/Clarified butter - ½ cup
▪️Chopped Almonds 10-12
▪️Chopped Cashews 10-12
▪️Crushed roasted peanuts for topping

How to:
➡️Grind the flax seeds in mixer to form powder.It might be slightly oily in texture.
➡️Heat the ghee in pan and roast the cashews and almonds.Take them out in bowl.
➡️Now add wheat flour in the same pan. Roast it until golden brown.
➡️Take a pan and add 1 cup water and jaggery. Stir the mixture till jaggery is completely dissolved
➡️Test the syrup by putting it between your forefinger and thumb. If the syrup leaves a string while parting the two, then it means the syrup is ready. Turn off the flame. (Another way to test the syrup is putting a drop in cold water and see if it hardens immediately.)
➡️Now add flax seed powder,roasted wheat flour and nuts to this sugar syrup. Mix it well.
➡️Pour the mixture in a greased tray and put some crushed peanuts on top.Let it set.
➡️Once the mixture cools down little bit, Cut it into square pieces. Let it cool completely and store it in air tight container..

Flax seed healthy bar/ Alsi ki barfi

This is my mom's signature winter sweet/dessert and one of my fav since childhood.I have loved this sweet even before I knew its immense benefits. My mom will always keep this ready for Winters and she will tell this will keep our body warm.Also,this is my contribution to #cleanteatguide by @flatter_platter_ guilt free healthy bar as no sugar is added.

In recent times flax seeds has emerged as “super food” .So let me tell you few benefits of flax seeds
⚡Loaded with good amount of protein,fiber and omega-3 fatty acid.
⚡Rich source of lignan,which reduces cancer risk
⚡Improves cholesterol
⚡Lower blood pressure
⚡Beneficial for cold,cough as well as arthritis patients.

RECIPE
Ingredients:
