AVOCADO 🥑 PASTA! 
I’ve been meaning to make this dish since my friend @maiamma13 sent me an avocado pasta recipe a LONG time ago. It took so long for me to finally make this cus I would always eat all of my avocados before I had the time to create a recipe with them. But I finally saved some and it was def worth it. 
Recipe:
1/3 package of rigatoni pasta 
A handful of tomberries (mini tomatoes) 
2 tbsps of onion, diced 
1 tbsp of garlic, chopped finely 
1 avocado, mashed 
Olive oil (about 1 tbsp) 
Salt and pepper

My presentation is pants but tasted great!! Mayflower Curry Sauce (3.5) loaded with Chicken, Peas, Onion & Mushrooms 👌🏻😋 Even my little "picky eater" had a bowl full with rice (she picked out the onions & mushrooms 😂) which I dont mind, because she otherwise finished it all!!😁 🥳

Protein Overnight Oats:
1/2 cup porridge oats
1/2 cup milk of choice
Leave in the fridge over night
Mix 1/4 cup Skyr & 1 scoop protein powder and stir in in the morning.
Top with chopped nuts berries or granola, sweeten to taste, depending on your protein powder.
333 kcal / 38g protein
.
Baked Protein Cheesecake:
80g crushed biscuits + 2 TBSP milk
450g vanilla skyr + 1 egg + 1 scoop vanilla whey, combined
Gradually add milk to crushed biscuits to form cookie dough.
Press into a 6" tin, top with the skyr mixture
Bake in a water bath* @ 170C for 30min
*Place your tin into a pan filled with water
138 kcal, 12.5g protein (6 servings)
.
Yogurt dip/dressing:
100g plain skyr
1/2 tsp each: sugar & mustard 
1 tsp each: garlic,  ginger, oregano, paprika
.
Fried yogurt “mice” doughnuts
1/2 cup skyr, 1 cup flour, 1 egg, 1/4 cup sugar
1 cup flour
1 egg
1/4 cup sugar
2 tsp baking powder
Combine into thick batter
Heat up about 1” of oil
Drop spoonfuls of batter into the oil and fry until golden, turning halfway through
Set onto some kitchen towel to drain off excess oil.

Other ways to have more of this fantastic food:
Skewers / Kebabs marinade
Replace sour cream in wraps 
Pair with granola
Spread on toast with some honey
Mix into smoothies to make them creamier and add a protein boost
Chill for frozen yogurt

Super Easy Oxtail

You will need:

About 1.5kg to 2kg’s of oxtail 
1 x 750ml tub of Dr Broth Beef Bone Broth

½ cup white kidney beans or any bean you like, just remember to soak in water overnight

1 sachet powdered oxtail soup

1 tbls tomato paste

Salt and pepper 
Turn your oven to about 150°c

Method:

In a saucepan on the stove, gently warm the Dr Broth Beef Bone Broth and carefully stir in the powdered oxtail soup and the tomato paste, stir to combine it as best you can. 
In a casserole dish that fits into your oven, arrange the oxtail, season it with salt and pepper, and pour over your soaked (and drained) kidney beans Try and push them into the gaps. 
Pour your broth over the oxtail using a sieve to get rid of any lumps from the soup. 
Now cover the surface of your meat and bone broth with some baking paper. This will help your oxtail steam. 
Put the lid on, put it into the oven and forget about it for about 4 hours

After the time is up, take it out the oven and let it sit for about half an hour. 
Now serve it with rice, mash, veggies or all 3!

Meal prep is one of the most time consuming parts of my day unless I plan ahead. I often cook up huge batches of main dishes and side dishes and make up lunch and dinner containers for the fridge. Pop them in the microwave, chop up a salad, and done!

For breakfast, I found the easiest way to meal prep in advance and control the nutritional content is to make a sheet pan frittata. The shape and size of the pieces stack well in the fridge for minimal space optimization. And even if I want to add one of the squares to a wrap or a salad, I just need to chop or slice it up first.

My lunch for the week.  This is a bad week (bloating) but it doesnt mean you give up.  I'm seeing results just but eating right and that includes portion control (Latinos biggest problem). Unfortunately in this country junk process food is more affordable instead of healthy nutritious food.  They want us unhealthy and obese for pharma companies.  I do my weightloss and a strict budget because it can be costly BUT ITS DOABLE.  I started this program at 200lbs my biggest ever and in less than a month in down to 188lbs.  Its hard not lying but its all mindset and determination.  I still have a long way to go but my motivation is being here in this 🌎 as long as I can for my children and grandchildren and goddess willing my great grandchildren.
