Gnocchis for Brunch today😍
To make these little things you need :
•gluten free gnocchis ( I found a pack for one person at Harvest in London I don't know where you could find those in Belgium though)
and for the " pesto" sauce :
• 3 Tbsp pine nuts•5 wild garlic leaves( ail des ours)•1 handful spinach•half an avocado•1 Tbsp nutritional yeast•1 handful rocket salad• some oat milk• olive oil•Italian spices•chilli flakes• basilic leaves
I cooked the gnocchis for two minutes in boiling water then roasted them in a pan until very crispy😍
then you need to blend all the sauce ingredients until creamy.
Finally you can add everything together in a pan and warm everything up!
Even better with roasted garlicly cherry tomatoes on top and some pine nuts!
And also, you need to adapt the recipe because for this one, I have been a bit messy with the quantities as I made way too much sauce, so I have just split the ingredients by two but try yourself and see if it fit your tastes 🤓🤭 Hope I can make you travel a bit with this dish ✈️💕
