Esiste qualcosa di più buono del profumo che sprigiona la torta di Mele 🍎🍏?
La mia oltre che senza glutine è anche senza lattosio.
Ricetta Torta di Mele:

3 mele
200 g di farina di riso
50 g di fecola di patate
180 g di zucchero di canna
3 uova medie
100 ml di latte di soia o latte di riso
35 g di olio di riso
1 bustina di lievito in polvere per dolci
cannella q.b
1 limone Biologico

Procedimento:

Iniziare la preparazione della torta polverizzando nel mixer la scorza del limone e lo zucchero e metterle da parte.
Sbucciare le mele, tagliarle metà a fettine sottili e metà a dadini. Bagnare le fettine di mela con il succo di limone per evitare che anneriscono.
Aggiungere alla buccia di limone e allo zucchero precedentemente polverizzati le uova, il latte di riso, l’olio di riso, la farina di riso e la fecola di patate. 
Amalgamare bene.
Per ultimo versare la bustina di lievito.
Infine aggiungere al composto le Mele tagliate a dadini e aromatizzate con la cannella.
Imburrare ed infarinare una teglia a cerniera del diametro di 24- 26 cm.
Versare il composto.
Guarnire la torta con le fettine di mela.
Infornare in forno preriscaldato in modalità statico per circa 45 Min a 180°.
Lasciare raffreddare prima di estrarre la torta dallo stampo.
Spolverizzare a piacere con zucchero a velo e cannella e servire.

Un secondo leggero, o un contorno davvero sfizioso questi Pancakes di Patate.

Ricetta per circa 4 persone:
Ingredienti
400 g di patate lessate schiacciate 
80 g di patate grattugiate finemente
1 uovo
5 cucchiaini di Maizena
Sale, Pepe
Bacon o Prosciutto o Spek

Bollire i 400 g di Patate e schiacciarle in una ciotola capiente.
Pelare gli 80 Gr di Patate e grattugiarle. 
Aggiungerle alle patate schiacciate, unire l'uovo, il sale, il pepe, la maizena ed amalgamare per bene.
Riscaldare un filo d'olio in una padella antiaderente e con le mani unte di olio, formare una pallina e schiacciarla leggermente. 
Adagiarla nella padella e fare dorare qualche minuto su ambedue i lati. 
Procedere in questo modo fino ad esaurimento dell'impasto. 
Sistemare poi i pancakes ottenuti sulla placca del forno rivestita di cartaforno.
Mettere sulla superficie di ognuno, formaggio filante a scelta e spek o prosciutto o bacon a dadini.
Passarli in forno caldo per 5/10 minuti finché il formaggio non si è sciolto.

Una Ricetta insolita e davvero golosa: Metà cheesecake e metà brownies. ~ Ingredienti per TORTA BROWNIES CHEESECAKE~

150 g di burro
180 g di cioccolato fondente
3 uova
150 g di zucchero
100 g di farina di Riso
1 cucchiaino di lievito per dolci
30 g di noci
Per il cheesecake:
250 g di formaggio cremoso
1 uovo
50 g di zucchero

Mettere in un tegame burro e cioccolato fondente a pezzettini e farlo sciogliere. In una ciotola montare le uova con lo zucchero per almeno tre minuti (devono diventare bianche e spumose). Fare intiepidire il composto di cioccolato ed unirlo alle uova, aggiungere la farina setacciata con il cucchiaino di lievito ed per ultimo le noci spezzettate..versare il composto in una tortiera quadrata di cm 22. Mescolare con una frusta a mano il formaggio cremoso con l’uovo e lo zucchero. Disporre il composto di formaggio sopra a quello del cioccolato.
Cuocere a 170°per circa 40 minuti.

E allora impara a Vivere. Tagliati una bella porzione di Torta con le posate d’argento. Impara come fanno le foglie a crescere sugli alberi. Apri gli occhi. Impara come fa la Luna a tramontare nel gelo della notte prima di Natale. Apri le narici. Annusa la Neve. Lascia che la Vita accada.

Questa Torta è davvero deliziosa.
Delicata, umida ma croccante grazie alle Mandorle Tostate. 
INGREDIENTI ~Torta Mandorle & Ricotta~:
300 g di ricotta vaccina
240 g di farina di mandorle
150 g di zucchero semolato
120 g di burro
4 uova
Scorza grattugiata di 2 limoni BIOLOGICI
~Per decorare la superficie~:
75 gr di mandorle a lamelle

PROCEDIMENTO:
Con le fruste elettriche o la planetaria montate per qualche minuto il burro ammorbidito con lo zucchero e la scorza grattugiata dei limoni. Unite i tuorli, poi la farina di mandorle e la ricotta ben sgocciolata. Montate a parte gli albumi a neve e uniteli delicatamente al composto, incorporandoli dal basso verso l'alto.
Imburrate uno stampo da 20 cm di diametro, versatevi il composto, livellate la superficie e cospargetela con le mandorle a lamelle.
Cuocete a 150°C nel forno ventilato per un’ora circa. Fate la prova stecchino per verificare la cottura ma al centro resterà comunque umida. Lasciatela riposare dentro il forno spento per 5-10 minuti.

Uno dei miei Dolci preferiti da anni.
Veloce, semplice da preparare, delicato, cremoso e di sicuro effetto 😉  CHEESE CAKE
Ingredienti per la base: -Biscotti secchi senza glutine 150g (io ho usato gli Oro Saiwa)
-125g di burro

Per la crema:
4 uova intere
150g di zucchero
500g di mascarpone
250g di philadelphia
2 cucchiai di maizena
1 bustina di vanillina
Procedimento:
Ridurre i biscotti in polvere, sciogliere il burro (a bagnomaria o nel forno a microonde), mescolare il composto e adagiarli sul fondo di una teglia a cerniera o in una pirofila da forno, riporre in frigo e procedere con la preparazione della Crema:
Montare le Uova con lo Zucchero.
Aggiungere al composto il Mascarpone e il Philadelphia, mescolare fino a creare una crema omogenea, senza grumi.
Unire la maizena e la vanillina e amalgamare bene.
Versare la Crema ottenuta sulla base di Biscotti e Burro, infornare a 180°, forno ventilato per circa 30 minuti.

It has prawns , courgette , garlic , peas and then we added some ginger too (they didn’t have any N’duja paste left) —————————-

Ricetta:
80g di farina di riso
80g di fecola di patate
140g di zucchero
120g di olio di semi/riso
3 Uova 
Mezza bustina di lievito x dolci
Una bustina di vanillina
La buccia di un limone biologico
Il succo di meta' limone
Zucchero a velo q.b. (per la glassa)
Procedimento:
Separate i tuorli dagli albumi e montateli con 70 Gr di zucchero a neve ben ferma e metteteli da parte.
Lavorate i tuorli con la buccia di limone e gli altri 70 Gr di zucchero. Versate a filo l'olio, poi unite le polveri dopo averle setacciate.
Incorporate gli albumi montati con movimenti dal basso verso l'alto, delicatamente. 
Versate l'impasto in una teglia da plumcake imburrata e infarinata e cuocete in forno già caldo a 180° per circa 40 minuti.

Glassa:
In un piccolo recipiente ponete 2 cucchiai abbondanti di zucchero a velo e aggiungete il succo di limone piano piano, mescolando continuamente. Procedete aggiungendo il succo di limone fino a quando la glassa sarà opaca.
Versate la glassa sul Plumcake solo quando questo è raffreddato completamente.

Had the pleasure of attending @bryonyehopkins event #abellyfulloffood with @theurbankitchen and @thelodge.space 
The Lodge Space was such a cute venue and I will be going back (I fancy attending some classes there) 
We had a mixture of salads for our main , I think my fave was the buckwheat , tomato , basil & apple salad. I would never have thought of this combination and I will definitely be trying it out soon. 
The discussion about gut health was extremely interesting to me and has made me want to improve  the quality of food that I am putting into my body. As @theurbankitchen said it’s not about taking things out of your diet , it’s about adding the right things ☺️❤️

Day 24 of the VEGGIES FOR BREAKFAST CHALLENGE!!! We are enjoying a Good Morning Bloody Mary!

Oh yes! A fresh and nutritious homemake V8 Juice that is kicked up with Worchester Sauce, horse radish and hot sauce. .
This was incredibly delicious. Now, This morning I have a whole day of training for Girl Scout Camp, so mine is vodka free. But you go ahead and start your long weekend by adding a shot of good quality vodka to yours.
.
For this recipe I added both fresh and canned tomatoes. The fresh tomatoes makes it fresh tasting (of course), and the canned gives a more intensive tomoto flavor. . 
I have found that blending both tomato products in the @vitamix then straining it is better than sending it thru the juicer. But every other veg will be juiced. I know that's a lot of dishes but it makes for a way better Bloody Mary mix.

Here's the recipe--->
.
2 Beefsteak tomatoes
14.5 oz can diced tomatoes
2 large cellery stalks
1 large carrot
1 slice of beet (more for color than anything)
1/4 cup of parsley
Juice of 1 lemon
2 heaping teaspoons of horse radish
2 teaspoons Worchester sauce
hot sauce to taste
Salt and pepper to taste
.
1. Blend fresh tomatoes with canned tomatoes in a blender, then drain through a seive into a large bowl.
2. Using a juice machine, juice cellery stalks (leaves too!), carrot, beet and parsley.
3. Add juice to the bowl with the strained tomato juice.
4. Mix in lemon juice Worchester sauce, hot sauce, and salt and pepper.
5. Chill and serve.

Day 23 of the VEGGIES FOR BREAKFAST CHALLENGE!!! This morning we are having Carrot Cake Overnight Oatmeal. It you are looking for a make-ahead, healthy, and delicious breakfast, this is the one for you! .
The trick to getting our Carrot Cake Overnight Oatmeal right is to cook the carrot just for a minute or 2 in the microwave so they are al dente. I like it this way better than adding it raw because the texture of the slightly cooked carrot has a nice chew where the raw carrot it too crunchy for this breafast, IMO.
.
What also makes this so incredibly tasty is all the yummy ingredients you can add. Here I added raisins and coconut flakes. But you can add nuts too, like pecans, if you like.
.
Here's the recipe--->
.
1 cup GF oatmeal, I used @bobsredmill 
1 cup grated carrot
1/4 cup unsweetened coconut flakes
1/4 cup raisins
1 teaspoon cinnamon 
1/4 teaspoon dry ginger
2 teaspoons honey
2 cups milk of your choice, I used @almondbreeze Coconut-Almond blend
.
1. Cook grated carrot in the wmicrowave for 1-2 minutes. Let cool.
2. Divide all ingredients into 2 mason jars and mix well, or mix all ingredients into a bowl then fill 2 mason jars. Your choice. Not using a bowl creats less dishes to clean. 
3 Put a lid on the jars and leave in the refigerator over night.

Day 22 of the VEGGIES FOR BREAKFAST CHALLENGE!!! Today we have Eggs Florentine. Traditional Eggs Florentine has cooked spinach, poached eggs, and hollandaise sauce on an English muffin. Because I don't eat gluten I served mine on a gluten-free bagel.
.
This dish was a real treat! Anything with hollandaise is rich, delicious and AMAZING! My hollandaise is very easy to make and foolproof. No double boiler and no curdling. The key to getting the perfect hollandaise is to get that butter VERY hot! When you add the hot butter to the egg yolks mixture it will cook the eggs and thicken up perfectly.
.
This recipe serves 4 people, 2 eggs florentine muffins/bagel each.
.
Here's the recipe--->
.
FOR THE POUCHED EGGS
8 eggs
1 tablespoon white vinegar
water, enough to cover the eggs in the pan
FOR SPINACH MIXTURE
1 teaspoon olive oil
10 oz. baby spinach
1 large shallot, minced
1/2 teaspoon dry thyme
4 GF bagels/bread/or english muffins
FOR THE HOLLANDAISE
4 egg yolks
1 stick salted butter
pinch salt
pinch pepper
pinch cayenne
juice of 1 lemon
. 
1. Heat oil in a skillet over medium high heat. Cook shallots until soft. Add spinach half at a time. Cook until wilted. Turn off heat and cover. Set aside.
2. Pouch eggs. Boil water in a large deep skillet with 1 tablespoon white vinegar. Set water to a slow simmer. Crack 4 eggs into the water leaving spaces between them. Cook for 4-7 minutes. Remove when done and drain on a paper towel. Repeat with other 4 eggs. 
3. Make hollandaise sauce. Place 4 egg yolks in a medium bowl with salt, pepper, cayenne, and lemon juice. Stir.
4. Heat butter in the microwave until melted and bubbling hot.
5. Slowly add butter to egg yolks wisping constantly. 
6. Toast your bread product of choice, top with spinach mixture, then add pouched eggs, and drizzle hollandaise sauce over the top. .

1 large shallot, minced
1/2 teaspoon dry thyme
4 GF bagels/bread/or english muffins
FOR THE HOLLANDAISE
4 egg yolks
1 stick salted butter
pinch salt
pinch pepper
pinch cayenne
juice of 1 lemon
.
1. Heat oil in a skillet over medium high heat. Cook shallots until soft. Add spinach half at a time. Cook until wilted. Turn off heat and cover. Set aside.
2. Pouch eggs. Boil water in a large deep skillet with 1 tablespoon white vinegar. Set water to a slow simmer. Crack 4 eggs into the water leaving spaces between them. Cook for 4-7 minutes. Remove when done and drain on a paper towel. Repeat with other 4 eggs.
3. Make hollandaise sauce. Place 4 egg yolks in a medium bowl with salt, pepper, cayenne, and lemon juice. Stir.
4. Heat butter in the microwave until melted and bubbling hot.
5. Slowly add butter to egg yolks wisping constantly.
6. Toast your bread product of choice, top with spinach mixture, then add pouched eggs, and drizzle hollandaise sauce over the top. .

The last time I saw one was when I was on holiday !! Don’t think I have ever seen one in the U.K. until now ☺️👏🏻 These cakes are the perfect size for fitting into any lunchbox , coat pocket or bag and are great addition to any gluten free cupboard 🥳

My hunny has a bit of an obsession with the Red Lobster Cheddar Biscuits & after feeling left out (and quite-frankly left drooling as he enjoys freshly home baked, cheesy goodness right in front of my damn #celiac face) I decided to take a stab at making my own. Since this is the first time I’ve tried making #glutenfreebiscuits I thought I would try out a mix!

I had no idea what to expect, especially after making some mods to the recipe (i.e adding cheese & making homemade buttermilk — also for the first time & mostly out of laziness for not wanting to go back to the store 🤦‍♀️).
Thankfully I was pleasantly surprised and will definitely buy this mix again. Perhaps next time I’ll follow the instructions haha

I LOVE it in these Greek Yogurt Oatmeal Cups - It's smooth, creamy, and great on its own OR added to your favorite recipes. I picked up a couple packages at my local @walmart!

I purchased the : Salmon Verdi 
And the Seaweed Salad
These are both gluten & wheat free and suitable for coeliacs as they list all may contains on their products (these two didn’t have those). I would check the other products if you find one as I don’t think everything is gluten free but they had such a great selection.

Day 21 of the VEGGIES FOR BREAKFAST CHALLENGE!!! This morning we have a savory twist on a classic favorite. Zuchinni Waffles!

They were so good! I served mine with a dollop of sour cream, but I think a gorgeous fried egg with a runny yolk would have been AMAZING too!
.
Here's the recipe--->
.
1 1/2 cup zucchini, shredded
1/4 teaspoon salt
1/2 cup gluten free flour, I used @kingarthurflour 
1/2 butter milk
1/2 teaspoon baking powder
1 egg
1/2 cup shredded parmesan cheese
cooking spray
. 
1. Plug in your waffle iron and let it get hot while you make the batter.
2.Salt shredded zuchinni and let set for 10 minutes. The zuchinni will release moister. Squeeze dry in a clean tea towel.
3. In a large bowl add flour and baking powder. Stir.
4. Add egg, buttermilk, parmesan cheese, and zuchinni. Mix well.
5. Spray waffle iron well with cooking spray. Add batter to waffle iron and spread out if needed. 
6. cook for about 4-5 minutes or until browned.
Makes 4 waffles

Day 20 of the VEGGIES FOR BREAKFAST CHALLENGE!!! Today we are serving up a classic diner special. Cauliflower "Steak" & Eggs!!! .
Ok, so it's not exactly the original classic, but boy was this a yummy (and way healthier way) to get the steak and egg experience!
. 
First you need a head of cauliflower. Take off the leaves and cut the stem flat. Slice carefully down the middle and cut 1 inch "steaks" from both sides. I only got 2 good "steaks". The rest did not hold together so I riced the broken pieces and froze it.
. 
We are also creating a spice rub to sort of encrust the cauliflower steaks. Think of the flavors you like on a beef steak and add those seasoning to the cauliflower. .
Here's the recipe--->
.
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika 
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
2 cauliflower steaks
2 eggs cook the way you like them, mine are sunny side up.
.
1. Heat the oven to 400 degrees.
2. In a small bowl mix salt, pepper, paprika, onion powder and garlic powder. Set aside.
3. Place the cauliflower steaks on a medal sheet pan. Brush both sides with olive oil. Sprinkle both sides with spice mix.
4. Bake for 15 minutes then turn steaks over. Cook for another 10 minutes.

Day 20 of the VEGGIES FOR BREAKFAST CHALLENGE!!! Today we are serving up a classic diner special. Cauliflower "Steak" & Eggs!!! .
Ok, so it's not exactly the original classic, but boy was this a yummy (and way healthier way) to get the steak and egg experience!

First you need a head of cauliflower. Take off the leaves and cut the stem flat. Slice carefully down the middle and cut 1 inch "steaks" from both sides. I only got 2 good "steaks". The rest did not hold together so I riced the broken pieces and froze it.

We are also creating a spice rub to sort of encrust the cauliflower steaks. Think of the flavors you like on a beef steak and add those seasoning to the cauliflower. .
Here's the recipe--->
.
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
2 cauliflower steaks
2 eggs cook the way you like them, mine are sunny side up.
.
1. Heat the oven to 400 degrees.
2. In a small bowl mix salt, pepper, paprika, onion powder and garlic powder. Set aside.
3. Place the cauliflower steaks on a medal sheet pan. Brush both sides with olive oil. Sprinkle both sides with spice mix.
4. Bake for 15 minutes then turn steaks over. Cook for another 10 minutes.

So, it's almost the end of May and there's a frost warning in effect this evening in Minnesota (seriously, this is the winter that just WON'T end). We tilled a huge garden, built a fortess of a deer fence, and are now waiting for some decent weather so our plants can get in the ground where they belong. Until then I'll tide myself over with soup - This Curried Cauliflower and Potato Soup to be exact. It's vegetarian, vegan, gluten free, and has just the right amount of warming spices for max comfort. 🍜🍜
