{NEW} Mason Jar Chickpea Greek Salads 🍋🌱🍅 .
makes 4 servings/jars .
.
Ingredients for 4 jars/servings:
8 Tbsps apple cider vinegar
4 Tbsps extra virgin olive oil
1 large juicy fresh lemon, quartered
sea salt and fresh ground black pepper
15oz. chickpeas, drained and rinsed well if using canned 
1 red onion, diced small 
1/2 cup Kalamata olives
1.5 cups cherry tomatoes
1 large English cucumber, chopped
1/2 cup crumbled feta cheese
2 cups packed baby arugula

Instructions:

You'll need 4 (28oz.) canning type, glass jars with lids to assemble the salads.

Add 1 Tablespoon of extra virgin olive oil to each mason jar. 
Add 2 Tablespoons of apple cider vinegar to each jar.

Then, squeeze 1/4 lemon and add a pinch of sea salt and pepper to taste into each jar.

Next, add in the remaining ingredients equally as follows from bottom to the top of each jar: chickpeas, diced onion, olives, cherry tomatoes, chopped cucumber, crumbled feta cheese and packed arugula right at the top.

Add lids to the jars, twist to seal, and refrigerate for up to 5 days.

When ready to serve, just pour out the jar contents into a large bowl, gently toss to combine and enjoy! ❤

▶️INGREDIENTS:
1 (15 ounce) can chickpeas or garbanzo beans
1 large ripe avocado
1/4 cup fresh cilantro, chopped
2 tablespoons chopped green onion
Juice from 1 lime
Salt and pepper, to taste
Bread of your choice (I use whole wheat bread)
Fresh spinach leaves or other sandwich toppings: lettuce, tomato slices, sprouts, etc.

▶️DIRECTIONS:
Rinse and drain the chickpeas. Place on a paper towel and remove the outer skins. You can leave them on, but I like to remove them.
In a medium bowl, using a fork or potato masher smash the chickpeas and avocado together. Add in cilantro, green onion, and lime juice. Season with salt and pepper, to taste.
Spread salad on bread and top with your favorite sandwich toppings. I like to add fresh spinach leaves.

Was planning on having toast 🤩 this morning but, after the toaster started smoking, I figured it was time to retire her. 😬 I’ve had her for 3 years... a $20 toaster! I gave up on making toast this morning and, instead, made these carrot noodle nests. Sometimes, ya just gotta go with the flow ya feel?
Still catching up on personal things after 3 weeks of finals! 👏🏻 Honestly this past week has been the least stressed I’ve been in a while so I’m loving every second! Also, it’s prime that the weather is also cooperating with me! Catch y’all on the flip side! 
The deets: sauté noodles in garlic ghee until crispy, form two wells in the center, and then crack two eggs in each. Cook until the white is solid, then serve with my chipotle red lentil dip, spinach, and kraut! #thecuttingveg .

Sprinkled salt and pepper on the pork chops. Coated with mayo. Dipped in a mix of crushed pork rinds, parmesan cheese, and seasoning. Put in the air fryer 20 min each side. Steamed some asparagus, and topped with butter. Delicious!

INGREDIENTS
Vegetables
1½ cups cherry tomatoes
1 large carrot, cut into coins
1 yellow bell pepper, 1-inch dices
1 medium-size red onion, 1-inch dices
10 asparagus spears, trimmed and cut in half
3-4 tablespoons olive oil
Salt, to taste
Pepper, to taste
4-5 garlic cloves
4-5 sprigs of thyme

Steak
1 pound sirloin steak, or favorite cut
1 tablespoon olive oil
1 garlic clove
Salt 
Pepper 
PREPARATION
Preheat oven to 400°F/200˚C.
Prepare the vegetables. 
Place cherry tomatoes, carrots, yellow bell pepper, red onion, and asparagus evenly on a baking tray. (Try not to let the vegetables overlap too much, so that they roast properly.)
Season with olive oil, salt, and pepper (to taste).
Add garlic cloves and sprigs of thyme on top of the vegetables.
Roast vegetables for 15 minutes. 
Bring back the tray and push vegetables to the side to make room for the steak. 
Place the steak in the middle of the pan and season both sides with salt and pepper. 
Top the steak with a sprig of thyme and a clove of garlic. 
Place back in oven for 10 more minutes or until desired doneness is reached. 
Allow the steak to rest for 5-10 minutes.
Plate the vegetables and top with cut steak.

Changing what you drink is one of the most foundational swaps you can make to help elevate your overall health and aid with weight loss. I want to prevent you from making the same mistakes I did so I thought I would share this helpful chart! While it’s totally great to treat yourself to fun drinks, make sure what you’re drinking on a daily basis is nourishing you, not depleting you ❤️

Water 💦 should always be a priority on your list because even mild dehydration (1-3% of body weight) can impair many aspects of brain function plus trigger headaches and migraines in some individuals. I always start my day with anywhere from 16oz-32oz water since you essentially wake up dehydrated from the night. If drinking enough water is not a habit for you yet, try setting reminders on your phone to drink every 2 hours or keep a full bottle at your desk!

Other high quality drinks to add to repertoire are protein shakes (feel free to add your own fruit at home since that’s the good kind of sugar paired with fiber), lower-sugar kombucha, teas, coffee and actually green green juices!

Drinks to minimize include:
sodas
juices since they remove the fiber from the fruit and act similarly in your body to other sugary drinks
fake green juices - really just fruit juice with a kale leaf added
store-bought smoothies - sugar-bombs in disguise
frappucinos - sugar with a side of coffee .
