Homemade Almond Butter

This easy homemade version is healthy, affordable, and delicious.

Ingredients ——————
-1 1/2 c. of raw almonds
-Pinch of sea salt

Instructions

1. Spread the almonds on a rimmed cookie sheet, preferably with a baking mat or sheet of parchment underneath them. 
2. Roast them at 170 degrees celsius for 10 to 15 minutes, tossing at least once during the cooking process. Make sure to keep checking them as you do not want them to taste burnt!
3. When the nuts are fully roasted, remove the pan from the oven and let cool for at least 10-15 minutes.
4. Pour the nuts into the food processor and pulse to begin breaking them up. Remove the lid and scrape down the sides whenever needed. 
5. Once the almond butter is very smooth and creamy (no sooner!), you can blend in any add-ins you would like. I always add salt, for more flavor overall. You can also add cinnamon, vanilla and/or maple syrup for some sweetness. This is optional. 
6. Transfer to a jar and store your homemade almond butter in the fridge. Unlike store bought products which have a long shelf life, this homemade nut butter will last up to a month.

Spring Recipe

Zucchini Patties

Easy and delicious, these zucchini patties are the perfect side, hash brown or 'bun' substitute for any meal. You can add other vegetables if you would like and make these yummy creations your own. They also store well in the refrigerator.

Serves 4 in 20 minutes

Ingredients: - 3 Zucchini (medium sized)
- 1 tsp Sea Salt
- 2 stalks Green Onion (finely chopped)
- 2 Garlic (minced)
- 1 Egg
- 1/4 cup Coconut Flour (optional)
- 1 tsp Baking Soda
- 1 tsp Apple Cider Vinegar
- 1 tbsp Coconut Oil (for cooking)

Directions:

1. Grate zucchini using the large size on your grater or food processor.
2. Once grated, place in a bowl and toss in the salt. Allow the zucchini to sit in the salt for at least 10 minutes. Squeeze any excess water from the zucchini. The easiest way to do this is to place the grated vegetable in a large piece of cheese cloth and wring it out.
3. Return the zucchini to a large bowl and combine with the green onions, garlic, egg baking soda and apple cider vinegar. Add coconut flour if using (works well to bind the fritters).
4. Once everything has been mixed, form patties of about 2 to 2.5″ in diameter out of the mixture.
5. Place a large skillet over a medium-high heat. You want to allow the skillet to really warm up prior to adding any cooking fat to the pan.
6. Add coconut oil to the pan then place the zucchini patties in the pan. Allow them to cook for about 3 to 4 minutes on each side, until are crispy and golden brown.
7. Enjoy!

These are 100% #wholewheat red velvet cupcakes with a higher protein and lower fat cream cheese frosting (and no food coloring!). The secret healthy ingredients? Beets and kefir. 😮

-RECIPE-
(makes 14 cupcakes, inspired by @southernlivingmag’s recipe and @karalydonrd’s ingredient substitutions)
1. Preheat the oven to 350 degrees Fahrenheit.
2. In a food processor combine 1 cup rinsed and chopped cooked beets, 1 Tbsp beet juice from the can, and 1 Tbsp lemon juice to a smooth puree.
3. Add ¼ cup canola oil, ½ cup unsweetened @lifewaykefir, and 2 eggs.
4. In a separate bowl, whisk together the dry ingredients: 1¼ cups whole wheat pastry flour, ½ cup granulated sugar, 1 Tbsp unsweetened cocoa powder (NOT Dutch processed), 1 tsp baking powder, ½ tsp salt, ¼ baking soda.
5. Add the wet mixture to the dry and whisk to combine. Place liners in a muffin tin and scoop 3 Tbsp of batter into each cup. For the two extra cupcakes, I put liners in ramekins so they can bake at the same time, although they came out slightly wider and flatter. Bake for 15 minutes or until a toothpick inserted in the center comes out clean.
6. To make the frosting: combine 8 oz package neufchatel cheese, 5 oz container plain #organic Greek yogurt, ¼ cup powdered sugar, and 1 teaspoon vanilla. Transfer to a sandwich bag and cut off the corner to make a piping bag. Once the cupcakes are cool, frost and garnish with a raspberry (there will be lots of frosting leftover).

These are 100% #wholewheat red velvet cupcakes with a higher protein and lower fat cream cheese frosting (and no food coloring!). The secret healthy ingredients? Beets and kefir. 😮



-RECIPE-
(makes 14 cupcakes, inspired by @southernlivingmag’s recipe and @karalydonrd’s ingredient substitutions)
1. Preheat the oven to 350 degrees Fahrenheit.
2. In a food processor combine 1 cup rinsed and chopped cooked beets, 1 Tbsp beet juice from the can, and 1 Tbsp lemon juice to a smooth puree.
3. Add ¼ cup canola oil, ½ cup unsweetened @lifewaykefir, and 2 eggs.
4. In a separate bowl, whisk together the dry ingredients: 1¼ cups whole wheat pastry flour, ½ cup granulated sugar, 1 Tbsp unsweetened cocoa powder (NOT Dutch processed), 1 tsp baking powder, ½ tsp salt, ¼ baking soda.
5. Add the wet mixture to the dry and whisk to combine. Place liners in a muffin tin and scoop 3 Tbsp of batter into each cup. For the two extra cupcakes, I put liners in ramekins so they can bake at the same time, although they came out slightly wider and flatter. Bake for 15 minutes or until a toothpick inserted in the center comes out clean.
6. To make the frosting: combine 8 oz package neufchatel cheese, 5 oz container plain #organic Greek yogurt, ¼ cup powdered sugar, and 1 teaspoon vanilla. Transfer to a sandwich bag and cut off the corner to make a piping bag. Once the cupcakes are cool, frost and garnish with a raspberry (there will be lots of frosting leftover).

Ok, people. I'm trying out the Popped Cheese idea. Step 1: cut into (fairly) uniform pieces. Step 2: allow to dehydrate by setting out for 2-4 days depending on fat content and humidity. I'm guessing 3 or 4...it's Portland, after all. I used Tillamook reduced fat medium cheddar, because Tillamook trumps all other cheddar 😉  I'll get back to you for the next step in a few days.

This week has been super busy and all my meals have been rushed and on the go so I haven't been very active and I'm so sorry. This Wednesday I went to the Manchester Schools Climbing Competition (sponsored by @) and had such a great time. My hands, arms and back killed after but it was worth it. On Thursday I also sang at the spring school concert with the school choir at the RNCM. We had an amazing time and it went really well. 🍒 So breakfast was quite simple but very indulgent. Should you make your own bone broth or buy? While it does take time, some trial and error, and it can be messy to clean up.. I would MUCH rather make my own and I'll explain why. First of all... this 1.5 gallon batch cost me about $0.83 cents per cup. PER CUP! Even the cheapest, poorest quality "bone broth" in stores cost around $2-3 per cup. For higher quality bone broths you are probably going to pay closer to $4-8 per cup. Secondly, YOU are in control of the quality and everything that goes into it. No deceptive labeling.. no wondering if they even used actual bones or just chicken stock and salt.. no worrying about how half of the brands out there don't bother to use organic.. the list goes on. These were 100% grass fed/finished beef bones, all organic beets, multi-colored carrots with leafy tops, yellow onion, turmeric, jalapeño, apple cider vinegar, sea salt, and other seasonings simmered for just over 20 hours... all for $20... and the flavor combinations are as limited as your imagination. You also get to suck out the bone marrow afterwards and gnaw on the meaty roast beef parts and fat globules that stick to the bones. It's completely worth it so try it and I bet you'll love it and so will your gut👌

Make your own golden yellow orange tinted #gheebutter or commonly known as #clarifiedbutter from #organicsaltedbutter like I do for the best taste and aroma that is also free from preservatives & color. This ghee is absolutely safe even for people with dairy allergies as Ghee is only the #goodfat that is extracted from butter and the milk solids that contains the allergen proteins are carefully removed. Not up for a debate here, but I definitely know and can say that #clarifiedbutterisgoodforyou Above all, it’s cost efficient when you make your own. 👇👇
Recipe: I use 3 blocks of Kirkland organic salted butter (454g each block) from Costco that yields approximately 1.25L  of Clarified butter. Take a wide hard bottomed wok or kadai melt the butter on medium heat. As it melts and begins to boil, carefully remove the white froth that forms a layer on the top (which is actually the milk solids). This has to be done continuously until you see very little to no foam. This process could go about 30-40 minutes when you finally see the milk solids curdling and setting at the bottom of the wok or kadai. When they slightly start turning brown, turn of the heat and allow it cool down but do not cool off completely. They begin to solidify as they cool down to room temperature. When they are still warm and in liquid state, transfer to a clean container using a small sieve that has double close knit net or cheese cloth to strain off any milk solids. For the best and maximum use of the butter, reheat the residue until they curdle and separate from fat. Devour the aromatic fresh #homemadeghee that is healthy tasty and stays longer.
Tips: The entire process has to be done on medium to low heat to prevent the butter fat from scalding. (jam: 1 cup frozen mixed berries from a freezer bag, cooked down in a pan with 1/2 c water until mushy and thickened and then drizzled with honey and left in the fridge overnight). This gave me all sorts of PB&J vibes 😍😍

(jam: 1 cup frozen mixed berries from a freezer bag, cooked down in a pan with 1/2 c water until mushy and thickened and then drizzled with honey and left in the fridge overnight).
