In an ideal world dessert should always come first! So I figured dessert was a good place to start.
I made these chocolate chip cookies for a woman’s clothing exchange I hosted a few months ago. These cookies disappeared faster than the clothes did!
To me the perfect chocolate chip cookie is soft, chewy, and chocolatey (is that a word?) with the perfect amount of salt.
Hubby Host agreed that the secret to these cookies that makes them stand out is the amount of salt! Just like a salted caramel, these cookies are the perfect salty sweet combination.
For this batch I not only included chocolate chips but I added in shavings from a bar of chocolate to add to the texture of the cookie. Take it to the next level - these cookies would make the perfect ice cream sandwiches!
Soft Chocolate Chip Cookies
2 sticks melted butter - cooled
1 cup brown sugar
1/2 cup white sugar
Cream butter and sugar together until smooth
2 1/4 cup all purpose flour
1 tsp baking powder
1 tsp salt
Sift dry ingredients together in small mixing bowl
1 egg & 1 yolk
1 Tbsp pure vanilla extract
Add eggs and vanilla to sugar and butter mixture. Mix until smooth
Add flour to sugar mixture in three separate batches. Mix well, scraping edges of the bowl in between each addition
2 cups chocolate chips
1/2 cup chocolate bar shavings
Stir in chocolate until well incorporated
Refrigerate dough for at least 2 hours.
Preheat oven to 375 degrees. Roll dough into 1-2 inch balls and place on silicone mat covered cookie sheet.
Bake for 8 minutes. Edges will start to look slightly browned but the rest of the cookie will look under baked! This is the key to keeping these cookies soft! They will continue to bake slightly after they are removed from the oven. Keep the cookies on the cookie sheet for about 10 minutes before moving them to a cooling rack. They might fall apart if they are moved too soon.
