SCOTCH EGGS – LOW CARB AND GLUTEN FREE

INGREDIENTS

7 large eggs

1 tube of breakfast sausage

1/4 c parmesan cheese

1/4 c coconut flour

S & P

1/4 tsp garlic powder

1 egg, beaten

oil for frying

INSTRUCTIONS

Place the eggs in a medium saucepan in cold water. Bring to a boil and boil for 4 minutes. Turn off heat and let them sit in the hot water for five minutes. Remove from the pan and place in ice water. Cool for five minutes.

While they are cooling, mix your coconut flour, parmesan, salt and pepper and garlic powder in a shallow bowl or dish and set aside.

Peel the eggs under cold running water and set on a plate lined with paper towels. You may have to blot them as well, because you want them completely dry when you wrap them with the sausage.

Meanwhile, remove your sausage from the tube and cut into 7 equal portions. Take a piece and using your left hand, flatten the sausage out onto your right hand making an oblong oval that is about 1/4 inch thick. Place an egg in the center of the sausage, cup your hand and use your fingers to wrap the sausage completely around the egg. Then press as you would if forming a meatball to make sure the meat is evenly wrapped and smooth. Set aside and repeat with the other eggs.* I started my oil heating (in a heavy duty pan about 1/2 inch deep) while I wrapped these. Once they are all wrapped, dip them first in the beaten egg, then the coconut flour/parmesan coating and place them in your hot oil – I put the completed eggs onto a spoon and rolled them into the oil to prevent splashing.

They don’t take long to cook, turn them every 2 minutes or less until golden brown all the way around and then take them out and put them on a paper towel lined plate.

Served hot or cold these are awesome! And filling! I ate one and a half of them after taking the photos and was totally stuffed for hours afterward.

NOTES *It sounds harder than it really is but you’ll get the hang of it quickly

Please no judgment-2 weeks into keto, pants are getting a little looser, less bloating and abdominal discomfort,MORE energy, MORE food, without the guilt. Which is a huge plus for me...nobody likes eating minimally and lbh..falling right back off the wagon. I know you cant see much progress yet, but I'm super proud of myself for sticking to it!!! .

Finally tried this @halotopcreamery  Strawberry Cheesecake ice cream a few nights ago and omg. This is addicting. I’ve honestly stopped eating any of the low carb ice creams because as a former ice cream obsessed person I kept getting disappointed with taste and texture. But this flavor you guys is so good!! My husband had to grab the spoon out of my hand so I wouldn’t eat the whole thing in one sitting lol must try!

Not the biggest fan of pork rinds growing up. I just didn't like the ones fried in oil you'd get at the little push carts around LA. But on keto, we all know pork rinds are popular and can be used in a variety of ways.

My first intro to this snack was the @porkkinggood crumbs used as "bread crumbs". They were good and my pork rind re-intro was a success. Then yesterday at @wholefoods I saw these air popped rinds in different flavors. Grabbed a couple bags from @epicbar and @4505meats to try out. Yesterday I used the sea salt ones as chips for my guacamole. Not bad...

1/3 cup shredded cheese of choice
2 eggs
Sprinkle of garlic powder 
Serving size of pepperonis *2 TBS aldi pizza dip- you can easily make your own. (2tbs Mozzarella cheese, 1 tbs marinara sauce, Italian seasoning)
*jalapenos if you like •

Instructions: 
Spray pan with non stick spray. Turn heat to medium. Cover bottom of pan with shredded cheese. While that cooking and melting into a large cheese tortilla scramble your two eggs. Pour eggs over melted cheese and continue to cook. Be sure your pan is not too high in heat. Add pepperonis and dollop (spoon) the dip. There is no stirring this recipe. Once eggs look cooked fold over one side. Let cool then cut into pieces. Enjoy ! •

JALAPEÑO POPPER EGG CUPS

This makes a total of 12 Jalapeno Popper Egg Cups. Each Egg Cup comes out to be 157.17 Calories, 12.28g Fats, 1.35g Net Carbs, and 9.75g Protein.

The Preparation

4 ounces cheddar cheese

3 ounces cream cheese

4 medium jalapeño peppers, de-seeded and chopped

12 strips bacon

8 large eggs

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

The Execution

Preheat oven to 375F. Par-cook bacon so it's semi crisp but still pliable. Save bacon grease to add to mixture.

Use a hand mixer, to mix all the other ingredients (except cheddar and 1 jalapeno) together.

Grease wells of muffin tin, then place par-cooked bacon around the edges.

Pour egg mixture into the wells of the muffin tin. Don't overfill.

Add cheddar cheese on the top of the muffin, then a jalapeno ring. Cook at 375F for 20-25 minutes.

Once cooked, remove from the oven to let cool

This morning’s fluids! First, I drink 16 oz of water with electrolytes and apple cider vinegar (it tastes gross, I will be adding mio to it but I forgot lol), then an Atkins protein shake, and then some coffee with unsweetened vanilla almond milk, a pump of sugar free caramel torani syrup, and a stevia packet. Actually woke up with enough time to relax before work today. I’m stoked. .

This morning’s fluids! First, I drink 16 oz of water with electrolytes and apple cider vinegar (it tastes gross, I will be adding mio to it but I forgot lol), then an Atkins protein shake, and then some coffee with unsweetened vanilla almond milk, a pump of sugar free caramel torani syrup, and a stevia packet. Actually woke up with enough time to relax before work today. I’m stoked. .

Egg fast is over. Last night during yoga I started feeling nauseated and had some digestive distress (💩) when I got home. I have a challenging workout later tonight and I want to be physically ready for it. I am having the egg fast pancakes but with sausage in them like a sandwich. Later I'm going to have some tri-tip and maybe some veggies. Results after 3 day fast is I am down 6 lbs and feel leaner in the middle. Glucose and ketones weren't as good as yesterday this morning. But I slept poorly last night and ate my last meal at like 10pm... I am going to do another egg fast m-w next week. 3 days is about all I can manage on a really restrictive way of eating. I did feel better on the egg fast than when I did zero carb/ carnivore and had better results as far as ketones and weight loss. But if I am honest with y'all and myself, I don't do well when I cut veggies. My digestive systems gets pissed every time.

4-5 medium zucchini, rinsed and spiralized (or a pack of store-bought Zucchini Noodles)
4 tablespoons butter, divided
2 teaspoons minced garlic
1 tablespoon hot sauce (we used Sriracha)
1/4 cup (60ml) low-sodium chicken broth
Juice of 1/2 lemon
1 tablespoon minced parsley
1 teaspoon fresh thyme leaves
Crushed red chili pepper flakes, optional
Slices of lemon, for garnish
Marinade 
2 tablespoons olive oil
1 tablespoon hot sauce (we used Sriracha) or 1 teaspoon chili powder
2 teaspoons salt
1 teaspoon fresh cracked black pepper
2 teaspoons garlic powder
1 teaspoons Italian seasoning
.
👩🏼‍🍳DIRECTIONS
1. Slice chicken breasts into bite-sized chunks and combine with olive oil, salt, pepper, garlic powder, Italian seasoning, and hot sauce or chili powder, mixing until evenly seasoned. Marinate in the refrigerator for 30 minutes to one hour.
2. In the meantime, wash and trim the ends of the zucchini. Using a spiralizer, make the zucchini noodles, then set aside.
3. Bring the marinated chicken bites to room temperature and heat two tablespoons butter in a large skillet over medium-low heat. Gently stir-fry the chicken pieces on all sides until golden brown. Remove the chicken bites from the skillet and set aside to a plate. You might have to work in batches to avoid crowding the pan and have steamed chicken instead of browned. 
4. In the same skillet over medium-high, add two tablespoons butter, lemon juice, hot sauce, and chicken broth. Bring to a simmer and allow to reduce for 1-2 minutes, stirring regularly. .

Если речь идёт об адекватной кето диете ( то есть вы не жрете один бекон и стейк, а вечером не закидываетесь хлебом ), то вы должны терять от 500 грамм до 1 кг в неделю. Адекватное кето-это много зелени, много овощей и полезных жиров. Это полное отсутствие сахара, даже фруктов. Полное отсутствие глютена. Овсянка тоже, даже  если на ней написано gluten free. 
А если вы все равно не видите результата, значит нужно подробно изучить ваш рацион.

Keto Cam Thursday tip of the day!!! Often times I find that I rush through and scarf down my meal...mostly out of habit, but also cause the meals are so delicious!
