INGREDIENTS
1 large head cabbage, leaves separated
2 tbsp. extra-virgin olive oil, plus more for baking dish
1 onion, chopped
2 cloves garlic, minced
1 1/2 lb. ground beef
1 (28-oz.) can crushed tomatoes
1 tbsp. balsamic vinegar
1/4 c. torn basil leaves
Kosher salt
Freshly ground black pepper
3 c. ricotta
2 eggs, beaten
1/4 c. grated Parmesan, plus more for serving
3 c. shredded mozzarella 
DIRECTIONS
Preheat oven to 350°. In a large skillet over medium heat, heat oil. Add onion and cook until onion is soft, about 5 minutes. Stir in garlic and ground beef, breaking up meat with a wooden spoon. Cook until beef is no longer pink, about 6 minutes; drain excess fat. Add crushed tomatoes and balsamic vinegar. Bring mixture to boil then reduce heat and simmer for 20 minutes. Season with salt and pepper then stir in basil. 
In a medium bowl, combine ricotta, eggs, and Parmesan. 
Grease a large baking dish with olive oil. Spoon a thin layer of sauce into bottom of baking dish. Add a layer of cabbage leaves, then top with more sauce, ricotta mixture, and mozzarella. Repeat layering twice more. 
Bake until cabbage is tender and mozzarella is bubbly, about 25 minutes. Garnish with more basil.

There are days where I don’t feel like I’m seeing progress. There are days where I want to give up. There are days when our society flashes pictures of perfection in front of me and I am discouraged because I will never live up to that standard.... then I find pictures like this. A little@over three months ago the picture on the left was taken on me while on vacation. I hid it because I hated the way I looked. The picture on the right is me last week. The results - to me at least - are significant. The thing is - I’m still the same@person inside, but now I feel like my vibrancy and zest for life shows on the outside as well. This is super interesting to me.. I was a bit worried after a few months of #keto that my cholesterol had gone up. But Dr. Berg said dont worry! He was right...2nd time labs showed cholesterol went back down. Second pic is of my triglycerides, which had been up in the 300s for the past few years. After keto for about 7 months I am so happy to see those go way down! Intro by @ketomermaid_ : Ok so full disclosure the pictures are not 6 months apart. I have very few pics from right when I started keto bc I loathed myself but I was the same size when I started.. I think I lost about 60lbs the first 6 months, my biggest, most noticeable difference was the first 3-4 months. From the day I started I kept “wonder how much I’ll lose in a few months” in the back of my head. I saw so many others losing a crazy amount of weight and thought THAT WILL BE ME!!! I literally did nothing but count my net carbs and trust the process. My life improved so much in 6 months. I felt like a haggard old sloppy worm transformed into a beautiful butterfly. I came out of my house more, out of hiding, had energy to take my kids kore places, took interest in shopping bc I fit in regular clothes again, I wore shorts for the first time in years, wore a bikini again 😫😭it was amazing. Everytime I see someone starting their journey and then posting their progress I’m rooting for them. I get excited to see people being successful bc I haven’t forgotten how absolutely amazing it felt .

Sorry I’ve been MIA, I had a bit of a meltdown and reverted back to my old ways😕 So here I am, 14 lbs over my lowest weight😒Buuuut I’m back and ready to hit the ground running, which says a lot since I hate running just as much as I hate math😅 I recommitted to Keto yesterday, as much as I hate to admit it, your girl need rules and structure in order to stay committed. It’s so much easier for me to go off plan when I don’t have a plan and left to my devices. So the plan for the remainder of May is to keep it simple, easy and doable. So I’m not even going to bother with tracking macros, no need to add to the fire when withdrawals are going to be kicking my ass for a while. 🙄

Meals for the week are:
Breakfast – Coffee
Lunch – Egg Salad with celery sticks & electrolyte drink
Snack – Pepperoni & cheese roll ups
Dinner – Egg roll in a bowl

Sorry I’ve been MIA, I had a bit of a meltdown and reverted back to my old ways😕 So here I am, 14 lbs over my lowest weight😒Buuuut I’m back and ready to hit the ground running, which says a lot since I hate running just as much as I hate math😅 I recommitted to Keto yesterday, as much as I hate to admit it, your girl need rules and structure in order to stay committed. Cheese Stuffed Bacon Cheeseburger

This makes 2 Cheese Stuffed Bacon Cheeseburgers. Each burger comes out to be 614 Calories, 51g Fats, 1.5g Net Carbs, and 33g Protein.

The Preparation

8 oz. Ground Beef
2 Slices Bacon, pre-cooked
1 oz. Mozzarella Cheese
2 oz. Cheddar Cheese
1 tsp. Salt
1/2 tsp. Pepper
1 tsp. Cajun Seasoning
1 tbsp. Butter

The Execution

Season ground beef with spices and make pattied with mozzarella stuffed inside.
Heat 1 tbsp. butter (per burger) in a pan. Once hot, add burger to the pan and cover with a cloche.
Cook for 2-3 minutes, flip place cheese on top, cover with cloche, and continue cooking until desired doneness is reached.
Chop bacon slices in half and place over the top of the burgers.

Cheese Stuffed Bacon Cheeseburger

This makes 2 Cheese Stuffed Bacon Cheeseburgers. Each burger comes out to be 614 Calories, 51g Fats, 1.5g Net Carbs, and 33g Protein.

The Preparation

8 oz. Ground Beef
2 Slices Bacon, pre-cooked
1 oz. Mozzarella Cheese
2 oz. Cheddar Cheese
1 tsp. Salt
1/2 tsp. Pepper
1 tsp. Cajun Seasoning
1 tbsp. Butter

The Execution

Season ground beef with spices and make pattied with mozzarella stuffed inside.
Heat 1 tbsp. butter (per burger) in a pan. Once hot, add burger to the pan and cover with a cloche.
Cook for 2-3 minutes, flip place cheese on top, cover with cloche, and continue cooking until desired doneness is reached.
Chop bacon slices in half and place over the top of the burgers.

💚 Today I went to get a baconator with no buns... but Wendy’s was out of bacon 😩 So I sat there in my car for like 7 minutes trying to figure out what to do with my life before deciding to just get a triple cheeseburger 🤣 When I got home I made some jalepeno cheese buns and despite not having bacon it was still pretty good 🔥👌⁣

Recipe for buns:⁣
Ingredients:⁣
4 slices Colby-Pepper Jack cheese (or cheese of your preference)⁣
2 tbsp Sliced Jalepenos⁣
⁣
Instructions:⁣
⁣
1. Preheat oven to 375F⁣
2. Put 2 slices of cheese on parchment paper, add jalepenos, cover with the other 2 slices of cheese & then salt them. ⁣
3. Switch setting to broil and then put in until the edges turn light brown or reach crispness of your desire. Take out & let harden⁣

Calories: 281⁣
Fat: 24g⁣
Protein: 16g⁣
Net carbs: 0.2g⁣
Fiber: 0.1g⁣

Sometimes the cheese will melt in an awkward shape so I just use a pizza cutter to make it evenly shaped lol.

I have Fasted (Both Intermittently and Extended) for 20 years. I Fast on a Daily Basis 16:8 (16 hour fasting with 8 hour eating) and will fast for Extended Periods (3-10 days) a few times per year. I have found tremendous health and cognitive benefits from Fasting combined with eating a well-formulated Ketogenic Diet. It just works for me. My body and brain just function better when I don’t eat food periodically.

A lot of feelings of depression and anxiety have been swirling around in my head, lately.
.
I went to Bible study at church this morning, only to find that it was over. (I hadn’t been in a few weeks, so I didn’t realize it had ended for summer.)
.
Instead, I merely sat by the fountains in front of the chapel. As a Florida beach baby, I absolutely luv water. It’s so beautiful here! As I sat, it occurred to me that in this fountain, hundreds, probably thousands of people’s lives have been washed in the water, raised from death to life - a public declaration of putting faith in Jesus Christ as personal Lord and Savior. Here is where sins have been washed away, and lives have been made clean and NEW!
.
It has been so very difficult to try and gauge God’s plan and purpose for my life, lately. I pray. Oh, how I pray.
.
I swirled my fingers around in the water. It was warm; it felt good. I wanted to jump right in!
.
This much I know, Jesus is WITH ME. He will NEVER leave me. He will ALWAYS love me UNCONDITIONALLY. FOREVER. Every sin I commit, however great or small, is washed clean by His blood shed on Calvary when I ask.
.
Lord Jesus, in the pain and suffering that life brings, I know you are with me. Forever. I know You will never leave me. Please do something remarkable in and through my life. May there be PURPOSE in the PAIN.
