I am always looking for ways to add in more meatless meals into a week. But, the hubs is VERY southern and thinks he needs meat at every meal. He has slowly been coming around as he finds meatless meals filling and flavorful.
So, what’s the trick? One I use is lentils! They really do not taste much at all so you can flavor/cook as you want but they are so high in protein.....which means filling!
