Courgette and Tahini dip with Paprika Tortilla Chips 
2 x White and wheat wraps 
3 courgettes,sliced 
3 cloves garlic ,peeled 
2 tbsp tahini
Olive oil spray
Paprika
Salt

Method 
Heat up oven to 180 degrees and add courgettes and spray with olive oil  and garlic cloves

Cook for 30 minutes 
Cut up the wraps into little lives does with paprika and olive oil spray and cook till brown approx 10 minutes ( mine were well doen but you can take them out sooner ) 
Blend the courgettes ,garlic ,salt And tahini in a blender 
Serve with the cooled tortilla chips 
My toddler devoured this and licked the bowl clean ...I will be definitely be making this again

Just made this healthy chicken madras, I blended (I used a fine grater to make the paste because I don’t own a blender) one onion, 2 cloves of garlic, about an inch of ginger, a red chilli and fried in a tiny bit of veg oil for a few mins, I then added 1tsp turmeric, 1 tsp cumin, 1.5 tsp chilli powder, 1 tsp ground coriander and mixed it all together for a further few mins, I then added chicken chunks, made sure the paste covered it all and turned the chicken occasionally for a few mins, I then added tin of chopped tomatoes, mixed it all together and left it to simmer on a low heat for about 30 mins until chicken is cooked through, I then added spinach to mine just because I add spinach to most things. 🥦Veggies ... because, duh.

☕️Coffee is life, obvi.

🍓Strawberries (and all fruit) are convenient bundles of awesome carb sources and packed with nutrients. Annnnd, a pound of strawberries is only like 150 calories. Seriously 🤯

🍫Chocolate ... because I have a stupid bit sweet tooth and we all need balance in life.

Other foods:
👉🏽Nonfat Greek yogurt is loaded with protein and a perfect snack.

👉🏽Rice and potatoes are my go-to starches.
.
👉🏽Protein powder ... for super convenient ways to supplement and get my macros on point.

This small run means so much to me right now. Yes it's only two miles but it is the first time in almost a year that got up at 6am to hit the pavement. The fact that I was able to run straight for two miles was amazing because I have been struggling with being able to run without stopping. Feels so good🤗
