A very Parisian breakfast this morning.  A whole wheat baguette with homemade fig jam and ghee on one side and some creamy Swiss cheese slathered on the other side.  Have some scrambled turmeric egg whites, a bit of liver mush, and some kiwi, strawberry, and pineapple.  And a chocolate coffee. BANANA BAKED OATS Anyone? 🙌🙌🙌 Okay - I'll share the recipe 😘😘 Exam Season & this semester in general has meant I've made SERIOUS use of my meal prep skills - And upped my game a little! ⭐Breakfast is my favourite meal of the day (*decision subject to change tomorrow*😂) - and since I can't have the Nut Butter on toast from @meetmeinthemorning everyday (#hint), my homemade go to favourites are definitely Overnight Oats & my Baked Oats!

@Regran_ed from @caloriestutorial -  This pretty much sums up intuitive eating. When I tell people that I work with intuitive eating, they always ask “what’s that?” So I’m explaining it here. Basically, intuitive eating is listening to your body. You let your internal hunger/fullness cues dictate what, when, and how much to eat. There are 10 principles of intuitive eating, but the first and most important is to reject the diet mentality. It’s not a diet and the goal is not weight loss. You may lose weight as a positive side effect, but the goal is to improve the relationship with food and rediscover the enjoyment in eating. In the diet mentality, a cookie is labeled as “bad”. When we want a cookie, biology in our brains wires us to be preoccupied with that cookie until we have it. In intuitive eating, we eat the cookie and move on! My best intuitive eating advice is this: just eat the damn cookie!

Being strong means getting back up! 😘👍👊😉👌 x

Happy Monday everyone ! Just wanted to take a moment to share a simple but very tasty recipe for those of us that have a bit of a sweet tooth. One of my favorite flavors for oatmeal is green apple and cinnamon. But since trying to eat healthier I had to give up flavored, ready to eat oatmeal’s. Instead I have created the following recipe to satisfy my taste buds. 
Ingredients:
-steel cut oatmeal (love Trader Joe’s brand) -granny smith apple
-maple syrup -cinnamon powder
-vanilla extract -unsweetened vanilla almond milk

Preparation:
1.) chop the apple ( I use one whole apple for two servings) into square slices. Measure out milk and oatmeal according to prep directions on the brand you use. 
2.) Place your pot over medium heat, once warm add desired amount of maple syrup. I like extra sweetness so I used about a tablespoon for two servings. Add a tsp of vanilla extract and then add the apple slices in. 
3.) Stirring occasionally allow the apple pieces to get tender. Then add cinnamon powder(eyeball it, to suit your taste buds). Once the apples begin to get browned and your kitchen smells like apple pie, scoop them out into a separate bowl.

4.) With your pot still on medium-low heat, deglaze it by adding a small amount of your measured out milk. Once deglazed add the rest of the milk. Then add a pinch of salt. Mix in your oatmeal once the milk is getting to a boil. Stir frequently, and allow to cook slowly over low heat (this will allow even cooking and give you a very nice thick and creamy final dish). 5.) Towards the end, add the apple back into the oatmeal, and stir gently. Pour your oatmeal into a bowl, and if you would like add some banana slices with a dash of cinnamon.

Hello health!

I don't want to be restrictive around food with my boys which is why yes, there are always healthy options, but they can also have treats and eat whatever they want at parties and when we eat out. But I definitely teach them around eating healthy and why we need to eat healthy, what food does to our bodies etc.

As a mom you are always skeptical if your methods work or if you’re are screwing up your child completely (hello, mom guilt). And this weekend I think I got a firm confirmation that what we teach them seems to be working!

My son had 2 parties for his birthday which meant two cakes. And at his second celebration he didn't want the cake because he said he had enough the previous day and would much rather save his piece of cake for later. #momwin 
Also, this is what I made yesterday and it was also my lunch today – it is baked polenta with vegetable sauce and vegan cheese. So easy to make and the kids loved it!

I have to say there are really amazing food enthusiasts and chefs that post divine pictures of their dishes. When I take a picture of what I just made, I think damn my pictures do not do justice for how delicious the food actually is. 
Since going vegan, I hate actually not being in my kitchen. Even though I do not have the skills of a professional chef or photographer, I really do hope I can convince more people to at least try some vegan meals. 
For today’s lunch I simply had a bag of pre chopped butternut squash and thought why not turn this Into a nice stew. 
1.) roast 1 pound of butternut squash at 400 degrees Fahrenheit for 45 minutes. I also found a red bell pepper in my refrigerator and decided to throw that in the mix as well. Season the squash and red bell pepper with whatever suits your taste buds. I used salt, pepper, paprika, cumin and rosemary. 
2.) start prepping stew mix. Sauté three garlic cloves in sun flower oil. And add a can of coconut full fat milk.

3.) Then add a vegetable bouillon cube to the mix, salt and pepper to taste. And allow it to simmer over low heat while veggies roast. 
4.) I also prepared a cup of white basmati rice along with cauliflower while waiting for the veggies to roast. For the cauliflower I simply mixed it in an oven safe bowl with minced ginger and soy sauce. Once the butternut was almost done roasting I placed the cauliflower in the oven as well.

5.) after 45 minutes your butternut squash should be completely tender. Carefully scoop it into the coconut milk mixture and blend with à immersion blender until smooth. Allow to simmer over low heat for another 10 minutes. 
6.) finally serve with rice and cauliflower or whatever you would prefer #😊 (Tip: squeeze some lemon juice and sprinkle with paprika once rice is done cooking)

I have to say there are really amazing food enthusiasts and chefs that post divine pictures of their dishes. When I take a picture of what I just made, I think damn my pictures do not do justice for how delicious the food actually is.
Since going vegan, I hate actually not being in my kitchen. Even though I do not have the skills of a professional chef or photographer, I really do hope I can convince more people to at least try some vegan meals.
For today’s lunch I simply had a bag of pre chopped butternut squash and thought why not turn this Into a nice stew.
1.) roast 1 pound of butternut squash at 400 degrees Fahrenheit for 45 minutes. I also found a red bell pepper in my refrigerator and decided to throw that in the mix as well. I added Parmesan cheese, some Neufchâtel cheese (instead of ricotta because I like the consistency of Neufchâtel better), spinach, sun-dried tomatoes, black olives, onion, bell pepper and had a side of baked garlic asparagus, brussel sprouts, and steamed broccoli.  I also had the other half of my whole wheat baguette with some ghee and fig jam.  I eat fruit with almost every meal.  My little way of sneaking in a dessert. This is a favorite breakfast tea for me. Especially with the holidays nearing and so many unhealthy and mostly non vegan choices available. I like to have a few sweet essentials around to fight away any cravings. As a new vegan it’s important to be prepared, no matter how strong willed you are.
