VEGAN MAC & CHEESE 🧀 .
Paals this was so good. I can’t get over how creamy it was and to me it tasted really cheesy (mby i’m not the biggest cheese connoisseur but can deffo vouch for it tasting good!!). I’ve seen so many different recipes out there using cauliflower / tofu / cashews / sweet potato etc to make dairy free cheese sauce and they all sound so interesting so thought I should try. Decided to make mine with a mix of tofu and cashews and based it off a recipe from @fivesechealth ✨✨

Recipe:
150g tofu (most recipes call for silken but I only had extra firm so pretty sure any kind of tofu would work) 
1/4 cup cashews (either boiled for 10 mins or soaked for a few hours) 
2 tbsp nutritional yeast
1/2 tsp garlic powder
1/2-1 tsp salt
1/4 tsp turmeric (just to give it a little colour) 
Black pepper 
Squeeze of lemon 🍋 
1/2 cup water 💦 .

Severed mine with some soybean sgagehtti from @aldiuk , sautéed mushrooms, peas, broccoli and kale ✨

This probably makes enough for around 2-3 bowls. Any leftover sauce would be amazing as a dressing for salad / grain bowls or I’ve also added cashew cream to brown rice before to make risotto🙌 .

On my table is a VANILLA AÇAÍ BERRY SMOOTHIE BOWL 🍓 fully loaded. Because I need ALLLLL the nutrients I can get to replenish myself after a very stressful week. When you’re the caretaker for a sick loved one, it’s easy to neglect yourself. If you’ve been there, I’m sure you know what I mean. 🙋‍♀️ Not a good idea. We must take care of ourselves too! This is how I started today: morning meditation 🧘‍♂️, followed by a walk in the woods🌲with my sweet pup Hugo 🐾, taking notice of the baby buds on the trees and then a nutrient dense, delicious breakfast with time to set my intentions for the day. 🌸 What do you do when life gets too stressful? I’d love to hear 💫
In my bowl: 🌱 3/4 cup plant milk (I’m using @silk oat milk lately) 🌱 1 @sambazon frozen açaí packet 🌱1 scoop @nuzest_usa vanilla protein powder 🌱1 frozen banana 🌱1/4 cup fresh squeezed blood orange juice and the zest of one orange 🌱1/2 cup frozen strawberries 🌱handful fresh mint 🌱1 tsp each  @rootandbones reishi and pine pollen powder 🌱Blend until creamy and topped with strawberries🍓, blood orange slices 🍊, Pitaya stars⭐️, @purely_elizabeth Gf ancient grain granola and @mountainroseherbs dried rose petals 🌹

I know they’re a British institution but I just don’t get them. The first time I tasted them I thought something had gone wrong with the tin and proceeded in adding lots of salt to balance out the sweetness (not the best move nutritionally) 😂

I think the concept of baked beans is quite good though: a cheap source of filling carbohydrates with a bit of protein. It’s comforting and warming.

Today because it’s a bit too cold for a salad and that’s I had been gardening all morning, I fancied a warm bowl of something comforting. So I decided to make my own version of baked beans: a lot less sweet and a lot spicer.
.
I used canellini beans, smoked paprika and harrisa as well as some tomato purée for added depth.
.
Served with a bit of sourdough and some creamy avocado and you have a nutritious meal which doesn’t let your tastebuds down.

If scrambled eggs are something you eat on the regular, I would highly encourage you to give this meal a try. SALMON and EGG power bowl with PAPRIKA pan seared potatoes, SWEET CHILI BRUSSELS and MAPLE BALSAMIC TAHINI DRESSING! Back home and craving veggies. Made this power bowl today after cleaning and working all morning. I was actually craving a Cobb salad, but I had no chicken, ripe avocado or bacon...sooooo this happened and I’m not complaining. These potatoes got extra crispy when I pan seared them before putting them in the oven. Also, these Brussels might be my new fave. Recipes below! Happy Monday all!

Deets: Seared salmon (from @thrivemarket), hard boiled @vitalfarms Egg, arugula, tomatoes, potatoes sliced in half, seasoned with paprika and salt and seared in just a little coconut oil before flipping them and roasting them in the same pan for about 15 mins on 425. Brussels: toss one pound of Brussels in a tablespoon olive oil, 2 tablespoons coconut aminos, 1 tablespoon sweet chili, salt and a little garlic powder. Roast on 450 for about 20-25 mins. Dressing: 3 tablespoons tahini, 1 tablespoon maple syrup, salt, 2 tablespoons balsamic, squeeze of lemon, water to consistency. •

SATURDAY SMOOTHIE - that’s it it’s a thing now I’ve just made it a thing. This will be trending everywhere 😂😂😂 My smoothie bowl this morning was my usual: - banana - frozen bluebs - frozen spinach + fresh celery - chunk of firm tofu - cacao + maca - ginger and cinnamon 
Topped with nuts, seeds, raisins, more bluebs and my staple peanut butter atm @pipandnut Smooth peanut butter. I just love the runny texture of it. THIS IS WHAT PEANUT BUTTER SHOULD BE LIKE. 
I had a bit of a struggle this morning justifying why I should have the smoothie bowl over something simple like toast and banana because that’s what my older brother was having. I felt like making my smoothie was such an extra breakfast and excess calories for no reason so today it was pretty hard. 
HOWEVER, I do have some exciting stuff happening and just wanted to ask - how many of you guys use YouTube???...... 👀👀👀
Now I’m gonna dig into my smoothie bowl and love every bite. Idc if my breakfast is ‘extra’ because I shouldn’t be comparing myself to other people!! Gluten-Free Egg-free Waffles with Tropical Fruits & Coco Yogurt ❤️💛🧡
Resep waffle-nya hampir sama kayak resep waffle yg pernah aku bikin sebelumnya. Bedanya, yg ini nggak pakai telur. Telurnya aku ganti pakai flax egg. Ada yg tau flax egg? Flax egg atau flaxseed egg adalah campuran 1 sdm flaxseed bubuk & 3 sdm air yg diaduk dan didiamkan 5-15 menit, sebelum akhirnya mengental & bertekstur seperti telur. Flax egg ini yg biasanya dipakai para vegan untuk mengganti telur di adonan kue. Selain flax egg, ada juga chia egg, yg proses pengolahannya hampir sama. Jadi untuk kamu yg alergi telur atau nggak suka bau telur, bisa lho pakai flax egg. Seperti di adonan waffle kali ini. 1 flax egg setara dengan 1 butir telur.
Adonan waffle:
•1 1/2 cup tepung oat (atau oat yg diblender menjadi tepung)
•1 cup susu kedelai (atau susu apa saja)
•1 flax egg
•1 1/2 baking powder
•1 sdt vanilla extract
•secuil garam
Oh ya, waffle-nya plain ya, jadi kalau mau ditambah pisang atau kismis untuk menambah rasa bisa lho. Kalau aku sengaja bikin yg plain tapi kuberi topping madu, coconut yogurt, & buah.

Gluten-Free Egg-free Waffles with Tropical Fruits & Coco Yogurt ❤️💛🧡
Resep waffle-nya hampir sama kayak resep waffle yg pernah aku bikin sebelumnya. Bedanya, yg ini nggak pakai telur. Telurnya aku ganti pakai flax egg. Ada yg tau flax egg? Flax egg atau flaxseed egg adalah campuran 1 sdm flaxseed bubuk & 3 sdm air yg diaduk dan didiamkan 5-15 menit, sebelum akhirnya mengental & bertekstur seperti telur. Flax egg ini yg biasanya dipakai para vegan untuk mengganti telur di adonan kue. Selain flax egg, ada juga chia egg, yg proses pengolahannya hampir sama. Jadi untuk kamu yg alergi telur atau nggak suka bau telur, bisa lho pakai flax egg. Seperti di adonan waffle kali ini. 1 flax egg setara dengan 1 butir telur.
Adonan waffle:
•1 1/2 cup tepung oat (atau oat yg diblender menjadi tepung)
•1 cup susu kedelai (atau susu apa saja)
•1 flax egg
•1 1/2 baking powder
•1 sdt vanilla extract

I love to eat nourishing foods! I don’t count calories, but focus rather on the quality of ingredients that I choose to put in my body. 
I don’t worry about the amount of fat I eat, because fat makes me feel the best and my skin, hormones, hair and nails benefit the most! 
I don’t cut food groups, I just listen to my body. I look at what makes it reacts in negative ways. I listen, and I adapt. 
I eat chocolate, I eat salads, I love ice cream, and nut butter is my jam! Some days I feel like chicken, the other days tempeh and tofu hits the spot! 
The point is nutrition and your wellness health journey is INDIVIDUALIZED. What works for me, may not work for you. Your goals may completely opposite to mine but that’s okay.

Happy Friday everybody! What spring vegetable or fruit are you most looking forward to? I definitely can't wait for cherries 🍒 to be back in season. I've been known to demolish near a pound (1/2 kilo) in one sitting. 🤣

This dinner was delightful, in spite of being really difficult to plate/photograph (beet juice EVERYWHERE). It had just the right amount of varying textures for me and any meal that has avo, beets and macadamia nuts is a hit in my book.

Details: pan fried a mix of spring onion, wild garlic, green and lacinato kale, yellow squash, white button mushrooms, kohlrabi and butternut squash in coconut oil flavored with rosemary and thyme then topped with rainbow micro shoots. Paired with black quinoa, steamed beets, macadamia nuts, avo and @veganseafood vegan smoked  salmon.

A splash of color on this rainy day ☔️ I caught up with my soul sis @tayloryvonne__ whilst eating some v bomb smoothie bowls from Palm Acai Cafe.

I usually root for making your own smoothie bowls at home (for creative freedom, possible added sugars, and $$) but I love to treat my self and love to share sweet treat experiences with my friends ♥️ Tis a balance.

I ordered “Gatherer”:
açaí base, strawberry, blueberry, goji berry, organic almond butter, bee pollen, sliced almonds, granola, raw honey

Tay ordered “Palma”
açaí base, strawberry, banana, goji berry, coconut, granola, raw honey with added mango

I would like to take this time to say that fruit is aaaaamazing for you, but to also know that these bowls are like a sugar rush for your body! 🍦 Eat fruit guys yes (please) but know that an açaí bowl like this, although very nutritious, is jam packed with sugar. So be aware with when you eat this within the day, and know that if you start your day with only fruit and do not balance it will sufficient fat and protein, your blood sugar will go on quite the rollercoaster ride. 🎢

(EN/ITA) Would you like to cook this delicious vegetarian ragù? I've shared my recipe for it on the online magazine @thetaste_ie Ragù is a traditional Italian sauce from the area called Emilia-Romagna, my homeland! The traditional version is made with meat (widely known as "Bolognese sauce"), but this recipe is based on seitan (it's also dairy-free, if you skip the cheese on top). The sauce needs to cook slowly, with patience, and following the same steps as the traditional preparation. In Italy, you would usually add plenty of Parmigiano on top but, as I suggest at the end of the recipe, if you live in Ireland try to pair it with the Irish Creeny from @corleggycheeses made of raw sheep's milk... and let me know what you think! IT >> Il ragù preparato secondo la ricetta tradizionale Emiliana, o con qualche piccola variante, fa probabilemente parte della tua cucina, indipendentemente dalla regione d'Italia in cui vivi.. giusto? Penso che in Emilia, ogni persona che per un motivo o per l'altro sia passata ad un'alimentazione con meno carne, abbia provato a rifare il ragù in versione vegetariana - è stata infatti una delle primissime ricette che ho preparato in veste veg tanti anni fa. Vorreste la ricetta? Ho avuto il piacere di contribuire all'ultima edizione della rivista online @thataste_ie proprio con la mia versione vegetariana del ragù (che può anche essere vegana, se non aggiungete sopra il formaggio grattugiato): è cucinata lentamente e con tanta pazienza.. elementi essenziali anche per la versione tradizionale! Good morning! One more working week to go until the H-O-L-I-D-A-Y-S!! Woo hoo! Are you excited too?⠀

Now how do you get your Monday Motivation when you know this time next week you are not at work?! How about a cheerful granola muesli bowl? My favourite  muesli of all time has to be Dorset Cereals Gloriously Roasted Nut Muesli @dorsetcereals (high on nuts, no added sugar and  easy on the dried fruit, which I find can otherwise be too sweet). The roasting makes this muesli soooo fragrant and crunchy. To boost up the protein, I've added some protein powder @pulsinhq too.⠀

For my chocolate kick, i've added some of 'Dave's cocoa crunch' granola (@thehappypear) To decorate, I've raided the fruit bowl, including lightly stewed cinnamon apple slices, persimmon (love that colour!) and then topped it with cacao nibs, seeds and raw cacao covered goldenberries @naturesheartuk then a generous helping of soya yoghurt. ⠀
