Nourishing Buddha-style bowl is my fave type of dinner! (Also, I just love eating out of bowls 😂) This bowl has some of my faves, like sweet potato, avocado mash and sweet sugar snap peas. Was going to use chickpeas for my protein source, but we had leftover tilapia that my mom wanted me to finish 😂 (I like fish, but salmon is my faaaaave)  Hope you’re all having a great week!

I stirred in coconut yogurt for extra creaminess 😋 and topped with Pb, more frozen strawberries and @shelbys_hh  dipped and dusted raspberry almonds!

Side note: I’m super happy almonds haven’t triggered any symptoms for me so far!! They were one of my favourite snack foods 🙌 hoping all my reintroductions go this well 🤞

Vitamin C is necessary for the growth, development and repair of body tissues. A recent meta-analysis also showed vitamin C was beneficial to people whose immune system was weakened due to stress.

While vitamin C may not be the cure for the common cold, there is good evidence to support that it helps reduce risk of developing complications when you get sick. Vitamin C itself is also a strong antioxidant that can help boost your blood antioxidant levels which in turn can help reduce risk of chronic disease.

If that’s not motivation enough to get in more Vitamin C, the American Journal of Clinical Nutrition found that those with the highest concentrations of vitamin C in their blood were associated with 42% lower stroke risk.

So don’t neglect this helpful vitamin and remember supplementation is always a great option too.

For more background info, one small orange has 51.1mg vitamin C and a medium orange has 69.7mg vitamin C. The minimum requirement for adults is about 75-90mg a day (but studies show up to 500mg a day to be beneficial).

Oops, I accidentally got stressed and busy with school and ate exclusively garbage for four months. But there's no time like the present to start cooking again. I made this avocado strawberry mango salsa from @ambitiouskitchen, which also has jalapeno, red onion, and lime in it. Paired with some garlic forbidden rice, chickpeas, and mixed greens.

This bowl features butter beans cooked in a saucepan with some turmeric and tamari, noodles (eaten with tahini post-photo), tamari mushrooms, zucchini, peas, asparagus, tomatoes, avocado and spinach. I love meals like this because unless I’m arranging them for food photography purposes, they take minutes to put together with whatever I may have in the fridge on a given day - aka, my type of student food. Quick plantbased nourish bowl 🌈 🥗 🥕 🍅 🥒 - mostly raw with homemade tahini lemon dressing. Tip: I cook quinoa in veggie broth and spices to make it less bland.

Ingredients:
Quinoa
Heirloom tomato
1/2 yellow pepper
1 cucumber
beet
carrot
green onion
roasted almonds (the black truffle ones from @traderjoes)

Dressing: 
1 tbsp tahini
1 tsp lemon juice
salt
water to thin (if needed, depends on your tahini)
.
Cook quinoa in veggie broth + spices: sprinkle salt, cumin, paprika, chili flakes + turmeric. You don’t have to pay attention to the quantities - just sprinkle each one equally.

Make dressing by combining 1 tbsp tahini with 1 tsp lemon juice and salt. Mix. If it’s too thick add a little bit of water to thin it.

Chop all veggies, mix everything together.

Keep this on hand just in case you decide to get lazy this Memorial Day Weekend or you just don’t want to put too much time into making your dishes but still want to impress people! 🤤 … Sweet potato chips and dip, it’s probably a 3 minute prep, while the oven cooks it for you. •
Slice your Sweet potatoes 🍠 into 1/4 inch slices- mine are from @misfitsmarket . Sprinkle generously everything but the bagel seasoning 🧂 from @traderjoes , spray with @thrivealgae oil, toss into oven at 375. Check on them 15 minutes later, flip and put back for another 15 mins. 30 mins later you take it out the oven, let stand for about 10 minutes and serve with @majesticgarlic hummus (could be garlic dip). My preference for this combo was cilantro jalapeño 🌶 because I needed that extra kick.

The tofu was so easy to make, just sprinkle over some smoked paprika & garlic powder, salt & pepper over your prepared tofu, shake the bowl to coat the tofu, then place onto a baking tray lined with baking parchment, and bake in a preheated oven at 200C/400F for 15-20 mins until crisp and lightly golden! .

OK, so I don’t usually rave about a salad you get at a chain, but @gardenbarpdx is definitely raising the bar (pun intended!) for build-your-own salads! This featured organic arugula, kale, red lentils, beets, pickled turmeric onions, roasted cauliflower, Oregon hazelnuts and a killer vegan cashew dill dressing! WOW! Go check it out...they also have pre-made suggestions if you get overwhelmed by choice (like me 😂) 🌿

This super simple bowl is from a while ago. There are baked potato slices with rosemary, steamed sweetpotato with ketchup and a bunch of romaine lettuce underneath. It was one of my laziest creations.. but I don’t mind it! The baked wedges were AMAZING, you have to try and add rosemary to your potato fries next time!🤤

This bowl features butter beans cooked in a saucepan with some turmeric and tamari, noodles (eaten with tahini post-photo), tamari mushrooms, zucchini, peas, asparagus, tomatoes, avocado and spinach. I love meals like this because unless I’m arranging them for food photography purposes, they take minutes to put together with whatever I may have in the fridge on a given day - aka, my type of student food. INGREDIENTS:⁣
• Bread⁣
• Your favourite slices of meat (peppercorn turkey breast & hot salami in mine) ⁣
• Eggs⁣⁣
• Avocados⁣
• Tomatoes⁣
• Cheese⁣ 🤤
⁣
I use Olafson’s Oat Nut & Honey bread and I like it extra toasted & crispy. I also like my eggs sunny side up and runny. Put everything together & garnish with green onions. To help your tomatoes from sliding around or getting your bread all soggy, layer with the ham first > tomato > egg > melted cheese. Enjoy!
