Now, I totally agree that cauliflower is taking over the world and sneaking it's way into just about everything these days. Some of these ideas I like, and sometimes I just want a regular carb-filled pizza crust or gnocchi. But I ALWAYS support sneaking vegetables into breakfast, especially when you cannot even taste them. Enter, cauliflower oats! I know I am late to the party with this concept, but am so glad I finally tried it out 💯
Recipe (made 3 servings):
1 cup steel cut oats
2 cups unsweetened vanilla almond milk (or milk of choice)
2 tbsp chia seeds
apple pie spice or cinnamon to taste
1 cup frozen cauliflower rice (@greengiant riced veggies cauliflower)
Put all ingredients except the cauliflower in a pot and bring to a bowl. Stir in the the riced cauliflower and bring heat down to medium. Cook for about 5 minutes, until desired consistency, stirring throughout.
Top with anything you'd like! Fruit, nut butter, granola, coconut, cacao nibs, hemp seeds, nuts, dried fruit, etc. Use the leftovers for breakfasts throughout the week. SO easy!
