Day 1 of rest week.

This week I will be concentrating on my mental health, things have been quite bad lately so I need to focus on trying to fix it. Hopefully being away from the gym doesn’t make it worse!

Crunchy Vanilla Granola🥜

Crunchy Ingredients:
- 1 c @harrawaysnz oats
- 1 c sunflower seeds
- 1 c pumpkin seeds
- 3/4 c sesame seeds
- 1/4 c poppy seeds
- 1/3 c chia seeds
- 1 c almond slices
- 1 c cashew nuts
- 1 c desiccated coconut
- Cracked salt to cover
- Cinnamon to cover

Binding:
- 3 Tbsp @nz.natural_products
- dash of oil
- 2 tsp vanilla bean extract
- Knob of butter

Preheat oven to 200 degrees. Mix all the crunchy ingredients in a baking tray. On the stovetop, heat together the binding ingredients. Let the mixture foam and bubble for about 10 min, stirring continuously so it doesn’t catch. Once nice and sticky, drizzle the binding over the crunchy ingredients, leave for moment to cool slightly (cool enough to touch) before using your hands to work it through.

Roast for about 10 minutes, stirring occasionally. Once golden, take out of the oven. Use the bottom of a pot to press the granola mixture firmly. Now for the hardest part - LET IT COOL before removing it from the tray. This will ensure your granola is in CRUNCHY clumps!

Recipe: * 1/2 cup oats
* 1 tsp maple syrup
* 1 tsp cacao powder * 1 tbsp peanut butter
* 1/2 cup water 
1). Add banana to a jar and mash with a fork.
2). Add all other ingredients and mix together
3). Let the oats sit overnight in the fridge and take out in the morning when you’re ready to eat (personally I think that this recipe tastes best cold but feel free to microwave it for a minute if you’d like!)

Porridge mit Kumqats, Birne, Pekannüssen und Leinsamen. 🍽️🍊// Irgendwie eine sehr herbstliche Bowl, aber beim Foodsharing gab es Kumquats und ich wollte sie unbedingt mal ausprobieren. 😊 Ehrlich gesagt nicht ganz so meins, weil sie doch sehr sauer sind. Aber es ist super bequem, da man sie nicht schälen muss. Lohnt ich ja auch kaum bei den Minidingern. 🤷‍♀️😁 Meine Familie ist nun wieder auf dem Heimweg und ich liege nun nach dem Sport auf dem Bett und gönne mir die letzten freien Stunden des Wochenendes und telefoniere mit meiner besten Freundin. 👭 Was war bei euch so los am Wochenende?

I have been so happy to have our friends in town this weekend and celebrate Jared and his graduation, and to top it off, I had these oats for breakfast 🤣 Get to be with some more family and friends today, so I’m looking forward to this Sunday. Here are the #dEATS for this probiotic oatmeal:
▫️one scoop of @lilsipper’s probiotic pea protein (optional)
▫️1/2 cup of rolled oats ▫️1 cup of milk, plus a little extra (if you really like them creamy and have added the protein powder, since it makes it thicker) ▫️ 1 tbsp each of chia and flax seeds ▫️dash of cinnamon and vanilla extract ▫️directions: bring oats and milk to a boil, then turn heat to low and set timer for 7 minutes. Add the rest of the ingredients and stir occasionally until done. Pour into a bowl, top, and eat! 🙌🏼 ▫️top with what you desire! I chose a banana, blueberries, AB, pumpkin seeds, @enjoylifefoods Choco chips, and one of the cookies I baked last night (from @rachaelsgoodeats). .

3 cups peanut butter, 1 cup coconut oil melted together. Add 1 1/2 cups of brown sugar and stir well. Pour over 21 cups of whole oats. Stir to coat oats and break up pb crumbles. Bake at 350 for 45 min or until toasted, stirring occasionally. Allow to cool completely and then store. #peanutbuttergranola

3 INGREDIENT BANANA OATMEAL BREAKFAST COOKIES! 🍌🍪 These HEALTHY cookies are naturally sweetened, oil free and of course vegan. They’re soft, chewy, delicious and super quick to make 🤤

The following recipe makes 12 cookies. I split the mixture into six to make six different flavours: vanilla cinnamon, chocolate chip, peanut butter chocolate chip, apple cinnamon, cranberry, and coconut. 
Ingredients:
- 2 medjool dates
- 2 medium bananas
- 1 cup quick oats
- 1 cup rolled oats
- Add-ins of choice (optional, but why wouldn’t you?) Method:
1. Preheat oven to 180C.
2. Mash medjool dates in a little water to form a paste.
3. Add bananas. Mash.
4. Stir through oats.
5. Let mixture sit for 5 minutes to soak up moisture.
6. Stir through add-ins of choice. This is the fun part - be creative!
7. Form cookies using about 2 tbsp of mixture for each cookie and place onto baking paper lined baking sheet.
8. Bake in oven for 12-15 minutes or until golden.
9. Serve warm or at room temperature. They’re better the next day.

This Works best with a ripe banana, as there is more sugar in the banana once ripened, giving the porridge a sweet flavour. ⁣

Topped with @quakeroatsuk super goodness nutri boost granola (oats, barley, quinoa, pumpkin seeds and sunflower seeds), this granola has a lower sugar content than most, natural selection cacao nibs, and sweet freedom low cal caramel drizzle. Oh and some bits of dark chocolate 🍫 😍⁣

Good morning! Hope the weekend is treating you well so far. A messy bowl of chocolate, coconut and PB oats to refuel after 10 miles  this morning for me. How to 👇 I was a bit tired after Eurovision fun last night 😂but managed to keep my pace.  Off to meet friends now and try to stay off my feet for a little bit! Have a lovely Sunday!

To make:
- Soak 1/3 cup of oats in 100ml coconut milk and a few splashes of warm water for 10 minutes. - Once it’s all soaked in add a further cup of water and cook slowly on a low heat.
- When the oats are done stir in a heaped tsp cacao powder, a little coconut sugar, vanilla extract and maca powder. I also add a bit of sea salt to bring out the flavours.
- Top with coconut flakes, raspberries, cacao nibs and peanut butter.
