Swede Gnocchi with walnut and spinach pesto
· 1/2 swede, peeled and cubed
· 1 medium potato, peeled and cubed
· 50g walnuts
· 50g spinach
· 60g Plain flour (or more if needed)
· 2 tbsp olive oil
· Garlic granules
· Mixed herbs
· Lime , juiced
· 2 cloves Garlic, minced
· Dairy free cheese, grated
Ø Add the swede to boiling salted water, boil for 10 minutes then ad din potatoes and continue to boil until both are cooked.
Ø Drain and allow to cool .Once cooled mash together and add in seasoning (salt, pepper, garlic granules and mixed herbs)
Ø Add walnuts to a blender and blitz the spinach leaves, olive oil, lime juice, paprika and salt and pepper. Check consistency and add more oil and seasoning if needed.
Ø Mash the potato and swede and add flour slowly and check consistency, it should be “rollable” .
Ø Roll out into little sausages and cut into little cubes.
Ø Add to boiling water and remover once they have risen to the surface.
Ø Add olive oil to a pan and some fresh garlic to the pan , add the gnocchi and allow to brown.
Ø Mix in Pesto and garnish with walnuts cheese.
