Breakfast: Tried banana nut muffins from Katie’s Bright Kitchen this morning. So delicious, and can’t believe I can eat ALL of this! Each batch has 1 fruit serving, 1 protein serving, 1 grain serving.
How to make: Combine the banana (6oz mashed), milk (2oz), 1 egg, baking soda (1/8tsp), baking powder (1/8tsp), dash of salt, cinnamon, cardamom, nutmeg and vanilla extract (I added this in). Fill greased muffin tins and add nuts on top. Bake 25-30 min at 350. • • •
