I wish it was a Tuesday but unfortunately #transformationsunday will have to be a thing! (And actually 28,000 people seemed to have already made it one so thank you 😂) .

One year ago TODAY I started my #postpartumjourney! Wow, I remember being so excited to get back to fitness as I had gained 42lbs with Grayson. I set Grayson up in the crib with a pacifier and prayed he would be content for the 25 minutes. I was WRONG...about a lot of things! I was not ANYWHERE near where I had been before getting pregnant and I felt defeated. I cried - a lot. Fitness was a part of me and I loved it and now I was starting over from scratch. But I quickly realized that my goal wasn’t to be where I was before - it was to take a brand new journey in a brand new body with a brand new little life that I now had living in my home 🙏. It wasn’t easy but it was so worth it. .
.
Give yourself grace. Trust the process.  Stay consistent. And when you really want something - I mean REALLY want something, you make it happen. Here we are an entire year later and my journey is still continuing.

Breakfast: Tried banana nut muffins from Katie’s Bright Kitchen this morning. So delicious, and can’t believe I can eat ALL of this! Each batch has 1 fruit serving, 1 protein serving, 1 grain serving.

How to make: Combine the banana (6oz mashed), milk (2oz), 1 egg, baking soda (1/8tsp), baking powder (1/8tsp), dash of salt, cinnamon, cardamom, nutmeg and vanilla extract (I added this in). Fill greased muffin tins and add nuts on top. Bake 25-30 min at 350. • • •

SUGAR is hidden in our food....The fact that over 70% of adults and 33% of children in America are overweight or obese is scary and really sad.

All that pre-packaged, convenient food is full of sugar and is designed to be addictive. 
That’s why it’s so hard to eat just a few potato chips before you realize the entire bag is gone!! I am learning so much while I am completing my certification in this nutrition program so I can better help my clients. (And myself)!! I’ve realized that I haven’t been eating the right food or enough of it.

I’m looking for 10 women who want to go through a 30 day TEST group with me starting in April.

Ramen!! Arguably THE BEST in NYC!! The broth is pork based and it’s cooked all day long. So good and so filling - this portion wasn’t huge, yet I was stuffed until 9pm! I got the Karaka-Men (spicy!!). Tonkotsu broth with spicy past 😋, thin noodles, pork, cabbage, mushrooms and the most amazing garlic oil. Fabulous!!! ZESTY MIXED BEAN SALAD

INGREDIENTS 
1 can mixed beans, drained
1 medium cucumber, diced 
1/2 punnet grape tomatoes (any tomatoes will be fine)
1/4 red onion, diced 
Chopped coriander/parsley

DRESSING INGREDIENTS 
1 tablespoon apple cider vinegar 
1 tablespoon lemon juice (fresh lemon 🍋)
1 tsp sweetener of choice 
Salt & pepper to taste

METHOD 
1)Add beans, diced onion, tomato, and cucumber into a bowl and mix
2)In a seperate bowl whisk together dressing ingredients 
3)Add dressing to bean salad and mix well!

Who here hates planning dinner, especially healthy dinners for you and your family? Do you even know what portion size of each food you should be having? Or does “eating healthy” scare the crap out of you because either A- “it’s too expensive” or B- you simply don’t know how? 
Well Guess what- now you can! We just launched a new nutritional based program that comes with the (not so little) containers and cookbooks! Yes- super easy meals that tell you exactly how much you should be eating! My fav- an easy KIDS “lunch” cookbook! HOW AWESOME IS THIS?!! We need to learn WHY and HOW we eat clean to fuel our bodies- NOT to get full. I’m going to be digging deeper into carb cycling, sugar addiction, portion control, etc.

While I’m learning all this nutrition information- I’ll be working towards my MASTER CERTIFICATION in ultimate portion fix!! That way I can better help my clients!

7 years ago I finished my first 15k. What I remember most clearly about that race (besides the endless hills) was seeing my family at the end, and Collin joining me for the last stretch before the finish line.

Jason, Collin, & Casey have always been my biggest fans, my loudest cheerleaders. My health journey would look a lot different if it weren’t for them.

And parents, remember that we set the example for our kids! 
Do you want them to have a healthy relationship with food? To treat their bodies as the temples God have them? To know that going for big dreams is worth the effort? To realize that they can do hard things!! Blessed and thankful 💙💙💙

Breakfast. Wishing I had blueberries or strawberries but bananas will have to do -1 cup unsweetened original almond milk
-1 scoop vanilla flavored protein powder -1/2 cup steel cut oats
-1/2 large banana slices
Mix almond milk and protein powder in shaker, put oats & bananas in bowl, pour shake over, stir & enjoy.

I prefer to ‘eat’ my breakfast so when I have a shake for breakfast I still eat with it. If I’m in a super hurry I’ll take a container of cut veggies and have that with my shake on the run or I’ll make ‘oatmeal’ out of it lol. There are so many recipes for ‘shakes’

Day 39 Powerful is done. I got through that workout thinking I still feel really weak...yet, when i look at my numbers from when I began, my power has grown. You would think 20 minutes is a walk in the park after working out for 6 weeks. Nope, this program is no joke. It works you to your core. Onto Day 40.

Now I have my head around counting, I need to focus on portion sizes and I’m going to try and weigh and track everything that I can. I have a weight loss goal in mind and I’m going really try and push myself to reach it.

FROZEN MANGO DESSERT!

You only need 1 ingredient for this! ⠀
⠀
INGREDIENT:
Diced frozen mango

METHOD 
1) Place frozen mango in a high-powered blender or food processor. 
3) Process until you get a smooth and creamy mixture, like a soft serve consistency. DO NOT over process!
4) Serve with fruit of choice. I’ve added kiwi fruit (skin on for extra fibre🙊), a mango rose (because we eat with our eyes 😉) and toasted coconut flakes!

According to Food Standards Australia New Zealand, ice cream is defined as "a sweet frozen food that is made from cream or milk products or both, and other foods, and is generally aerated".

Today, I start a new adventure with a new job! I got up, got some exercise in before I go, and have tasty and healthy meals prepped for the whole week! 🙌🏼🤗 So many new things starting this week! Tomorrow, I will officially start the certification course for a band new nutrition program! All new recipes and taking a deeper look into portion control and all kinds of eating habits. 🤓 I couldn’t be more thrilled to be learning new things!!
