These overnight oats from @chicanoeats are based off an indulgent, much-loved dessert: tres leches cake. The oats steep in milk, almond milk and coconut milk and are then topped with toasted coconut and fresh berries for a delicious breakfast that’ll satisfy any sweet tooth without the guilt.

Ingredients:
🥄1/3 cup unsweetened vanilla almond milk
🥄1/3 cup unsweetened coconut milk
🥄1/3 cup 2% milk
🥄1 teaspoon honey
🥄1 cup Quaker Oats
🥄2 tablespoons unsweetened coconut flakes + more for garnish/serving
🥄Optional: fresh berries for garnish

Directions:
In a medium-sized bowl, mix together the three milks and honey, then add the oats and unsweetened coconut. Stir to combine. Dish evenly into two jars or bowls, cover and let sit in the refrigerator for at least 5 hours and up to 4 days. Serve the oats cold, topped with reserved coconut flakes and fresh berries, if desired.

In January 2017, Jacob Anselmo and his wife, Rachel, received the devastating news that Rachel’s battle with a rare and aggressive form of cancer would be a losing one. After coming to grips with the family’s future, Jacob, who was 290 pounds at the time, began to see his health in a new light. “My wife was battling cancer and trying her best to stay alive for our children, while I was disrespecting my body and my health by making gluttonous food choices and not exercising,” he says. He immediately got to work on getting healthy in an attempt to be the best version of himself for his two children, Sophia and Henry. He kicked off his new commitment to healthy living by making two simple changes: He stopped drinking soda and switched from a sugar-and-cream-laden coffee to black coffee. He quickly lost 20 pounds from those two changes, but he wanted to take it even further. After realizing he didn’t know much about nutrition, Jacob researched all he could about calories, how they worked and what he should be eating as a daily allowance. He tracked everything with MyFitnessPal, sticking to a strict calorie count and weighing in every Sunday. After a few months, he began exercising regularly, which sped his progress considerably.
