IG used to be full of decked out smoothie bowls—they were quite the craze TBH. While vegan burgers, cauliflower wings, and the like have certainly stolen the spotlight over the years, smoothies remain a great way to pack in nutrition anytime of day. With warmer weather, I’m definitely bringing them back into my rotation. This combo is my absolute fav—açaí smoothie bowl base topped with homemade granola and fresh fruit. Recipe will be below! Acai-berry Smoothie Bowl
4 frozen bananas
1 cup frozen mixed berries
1 packet frozen acai
Handful of spinach
1 scoop @gardenoflife vanilla sport protein
Water to blend
Blend all ingredients in a high speed blender until super creamy and smooth.
Wild Blueberry Granola
2 cups rolled oats
1/2 cup buckwheat groats
1/4 cup raw walnuts or almonds, chopped
1/4 cup unsweetened shredded or flaked coconut
1/2 tbsp ground cinnamon
1/4 tsp sea salt
1/4 tsp fresh ground nutmeg
1/2 cup pure maple syrup or agave
1/4 cup dates, pitted
2 tbsp water
1 tsp pure vanilla extract
1/4 cup dried wild blueberries (or other dried fruit)
Mix together oats, buckwheat, walnuts, and coconut in a large bowl. Blend together cinnamon, salt, nutmeg, syrup, dates, water, and vanilla in a high power blender until smooth. Pour over dry ingredients and toss with spatula to coat. Spread granola in a thin layer on a baking sheet lined with parchment paper. Bake at 325 degrees for 15 minutes. Toss on pan and continue baking for 10-12 minutes or until golden brown. Allow to cool and toss in blueberries.
