Sweet potatoes! the recipe is actually the easiest and can be modified depending on whatever veggies you have in the fridge🌱
first, bake both sweet potatoes at 400 degrees F for about 35 minutes (i’m def going to try japanese sweet potatoes next 🙌). once done, take them out to cool, then start with the sauté filling. dice up organic andouille chicken sausage 🔥(whole foods brand) and add to a skillet with sliced broccolini & a few tbsp extra virgin olive oil to sauté for about 5-7 minutes. add diced red bell pepper, cumin seasoning, chili powder, pink salt & ground pepper to sauté another several minutes. next, throw in a few big handfuls of power greens & toss until well combined. slice open sweet potatoes & form them into little boats. fill with veggie sauté, grate goat cheese over the top & sprinkle diced red onion, then pop back in the oven for 5 min 😎 THEY ARE BEYOND.
