☕️ One of my favourite things about Bali, was visiting the coffee plantations! ♥️ I LOVE coffee, am obsessed really, so it was a lot of fun trying out all the different types of coffees and teas that the plantation companies would make. The most interesting coffee was coffee made from coffee beans that have been digested 💩 by luwaks. Luwaks are small, nocturnal mammals who are native to Bali and other parts of Asia. 🤭 Sounds so strange, but yes the beans are taken from the luwaks poop! The luwak’s diet consists of fruits and coffee cherries. They only choose to eat the very best beans they can find and they come back out almost intact in their feces. The fruit goes through a fermentation process when they are getting digested, where the enzymes break down some of the protein in the coffee bean. Since protein is an element that would give coffee a bitter flavour, the result is a super smooth coffee! The beans would get washed in boiling water 2-3 times and layers are removed to reveal the coffee bean. The bean then would get roasted for 45min. 💰 The unconventional process of producing the luwak coffee is the reason why it is the most expensive coffee in the world!
