I’m pleased to say that my fear of meeting my heros was completely unfounded - they’re two of the warmest, most welcoming and supportive people I’ve come across in a long time (swipe for star struck photos!)⁣⁣

We think LOTS to a. Inspire the next generation of scientists to contribute and b. Remain transparent with where research money is being spent and avoid public relation disasters that put “chemistry” under a bad light - think GM foods and climate science!!)⁣

Remain transparent with where research money is being spent and avoid public relation disasters that put “chemistry” under a bad light - think GM foods and climate science!!)⁣

Brekkie: choc overnight oats ⁣

👉🏼 Greek yog, scoop protein powder, scoop oats, teaspoon Cocoa powder and splash soy milk! I also add @myproteinuk flavored drops. Mixxx and leave in fridge. ⁣
👉🏼 topped with fruit ! ⁣

Grilled aubergine and veg ⁣
(From @thefoodmedic cookbook which you can get both on amazon!!! They’re the best) ⁣
4ish portions and 30 min⁣

👉🏼 two aubergines halved, sliced and topped with honey/soy mix ⁣
👉🏼 4 red onions, 2 red peppers, 2 courgette, 1 broccoli stalk ⁣
👉🏼 all seasoned with olive oil, garlic granules, garlic salt⁣
👉🏼 1/4 pot tzatziki ⁣

Grill all in oven for 25ish ⁣

Baked Vegan & GF Falafel !!! After experimenting with a few different recipes, I feel pretty positive that this is the best it gets!!! I absolutely love this recipe and falafel in general. The lil patties are packed with so much protein and they also store really well!! They can be added to salads, topped with hummus, etc for the yummiest dish! Details below 👇🏼

WHAT YOU NEED:
4 cups cooked chickpeas
1/2 cup curly parsley (packed)
2 tbs lemon juice
4 garlic cloves
1 tsp cumin
1 tbs tahini
1/2-1 cup chickpea flour
1/2 tsp za’atar seasoning (optional)
1 flax egg (2.5 tbs ground flax mixed with 5 tbs water, let sit for a min)

Add chickpeas, parsley, lemon juice, garlic, cumin, za’atar, and tahini to food processor. Pulse until chunky. Transfer to bowl and add flax egg and 1/2 cup chickpea flour. If mixture is too wet add more flour a little at a time. Form into little patties. You can either bake these on a parchment paper-lined cooking sheet for 10-15 minutes at 375 degrees or drop them in the air fryer, same time and degrees. Make sure to flip them halfway through! If you are feeling naughty, spray them with a little olive oil before baking them! They turn out a little crispier :)

💃🏻 be patient with yourself, especially if you have NO moves (aka I can’t dance, so I have no background moving in an aesthetic manner)
💃🏻 practice in the HEELS you’ll be in on stage
💃🏻 don’t make your movements jerky, it should be very smooth movements/transitions
💃🏻 POSE WITH PURPOSE! Yeah transitions are fun BUT you want to hit the poses that mean the most and make it known to the judges that THIS is the pose you want them to see 💃🏻 see what works for YOUR body, play around with what angles fit you best. As you lean down, you may find extra POP in places you didn’t see prior. So always assess and play!

💃🏻 be patient with yourself, especially if you have NO moves (aka I can’t dance, so I have no background moving in an aesthetic manner)
💃🏻 practice in the HEELS you’ll be in on stage
💃🏻 don’t make your movements jerky, it should be very smooth movements/transitions
💃🏻 POSE WITH PURPOSE! Yeah transitions are fun BUT you want to hit the poses that mean the most and make it known to the judges that THIS is the pose you want them to see 💃🏻 see what works for YOUR body, play around with what angles fit you best. As you lean down, you may find extra POP in places you didn’t see prior. So always assess and play!

Time for a Chinese inspired lunchbox... What to do with some leftover cooked rice? Fried rice with veggies it is! 100x better than plain rice and also super yummy when eaten cold 👌 I’ve added a grilled eggplant which I first marinated in soy sauce, Sriracha and sesame oil. Then added some cooked cauliflower and tempeh and I’m good to go!

Ingredients
Sauteed Apples:
2 tablespoons (28 grams) coconut oil or vegan butter
1/4 cup (60 milliliters) maple syrup
1 teaspoon molasses, optional
2 teaspoons ground cinnamon
4 sweet apples (810 grams), unpeeled, cored and sliced
2 teaspoons vanilla extract

Directions
In a large pan over medium heat, mix together the first four ingredients (coconut oil through cinnamon).
Once the oil is melted, add the apples and mix to cover the apples thoroughly in the liquid mixture.
Cover and simmer the apples for 7 – 15 minutes or until the apples are soft enough for your liking.
Add in the vanilla and stir.
Remove the apples from the heat and let them sit for 10 minutes and then serve. The liquid will gel a little as it cools. Can also be served at room temperature.
Store the leftovers in an airtight container in the refrigerator for up to 5 days.
Enjoy!

🌿Meal prepping salads for the week... 1. Create your salad base. I mixed up kale, butter lettuce & cabbage in large bowl
3. Prepare individual glass meal prep bowls with paper towel in bottom to absorb moisture
4. Divide salad base into bowls
5. Add different toppings so that salads are not exactly the same for a little variety
6. Waaalaaahhh 4 lunches are prepared for the week. Grab some fruit as a side if you like. *I pour the dressing and if adding avocado, right before eating. Use different dressings for different flavors. Again for if you don't like eating the exact same thing daily.

My current mix of toppings:
Cauliflower, broccoli, olives, tomatoes, red onion, green onion, capers, sweet corn, green peas, tofu feta, chickpea noodles, vegan parmesan, sunflower seeds. 
THEN with any leftover ingredients I'll mix some together to make a different dish, adding beans, quinoa and/or pasta. This is cost effective and saves time. 🙌☺️ NO RECIPES.

We took a seasonal break & dove into crafting some other meals but we back! 
Boiled, formed & baked plantain is the base here. Last night we mixed it with some Kale & Lentils. Baked it. Then put our signature Veloté, Walnut meat & diced pineapples in the cup of the Mofongo. 
It all fits into our meal prep bowls & with this, we can bring the taste  of the island with us wherever we are 🍌🌴🇵🇷

🏡Almoços de domingo em família: Apesar da minha família ser gaúcha, os almoços de domingo por aqui não tem churrasco, como é comum. O clássico da família, na casa da minha avó, é: massa com galinha, salada de batata com maionese, muitos tipos de carne, salada e arroz e feijão. 
Quando eu disse que ia parar de comer carne, ovos e laticínios vi algumas mudanças ocorrerem aos poucos e sem eu pedir :)
A salada de maionese perdeu a maionese e virou uma salada mista. Minha avó começou a fazer mais verduras e legumes. E no meu aniversário ela disse que a massa ia ser com molho de tomate, sem galinha, pra aniversariante poder comer também, achei fofo. 👵🏻♥️
Minha família continua comendo carne, diminuíram a maionese e acrescentaram muitos vegetais e verduras. E assim vamos vendo pequenas mudanças, até na alimentação deles. 🌱♥️🌎

Last weeks lunches were inspired by COMFORT FOOD! I was craving beans and rice last week (and really all the time) so I put together a health version of my fav. 🇲🇽 Cooked black beans in my instant pot and made quinoa the same way I make my Mexican rice. I made a “Jumbo Pico” with heirloom grape tomatoes, onions, jalapeños and hemp seeds. And also fried some plantains in coconut oil. Combined it all into 6 lunches for the week! Cheap and delicious!
Added limes and avocado on top. 🧡

Mine is a @morningstarfarms or @bocaburger buffalo chicken sammie with @followyourheart ranch and @sbrbbq buffalo sauce on a bun. 🍔🌱♥️ There's something about that spicy goodness that just hits the spot after hours out on the town. So yummy! (This was my buffalo chicken selfie from last night around 3 AM). 😂🤳👌
