and now I’m sat in a coffee shop to start my 4000 word essay SHOULD BE FUN (it actually should be heheheh, it’s on science communication which is pretty interesting!! basically how much of an effort should scientists make in involving the general public with research?? We think LOTS to a. Inspire the next generation of scientists to contribute and b. Remain transparent with where research money is being spent and avoid public relation disasters that put “chemistry” under a bad light - think GM foods and climate science!!)
ANYWHO another busaaayyyy week coming up - I have my huge 18 credit project on Saturday along with 2 deadlines!

Brekkie: choc overnight oats
(I could live off overnight oats soz for the lack of creativity they’re just so quick and delish!!!! but for some INSANE brekkie inspo GO FOLLOW the tagged accounts!)
👉🏼 Greek yog, scoop protein powder, scoop oats, teaspoon Cocoa powder and splash soy milk! I also add @myproteinuk flavored drops. Mixxx and leave in fridge.

Grilled aubergine and veg
(From @thefoodmedic cookbook which you can get both on amazon!!! They’re the best)
4ish portions and 30 min
👉🏼 two aubergines halved, sliced and topped with honey/soy mix
👉🏼 4 red onions, 2 red peppers, 2 courgette, 1 broccoli stalk
👉🏼 all seasoned with olive oil, garlic granules, garlic salt
👉🏼 1/4 pot tzatziki
Grill all in oven for 25ish
Chickpea sweet potato thing that tastes delicious
(When I make my own cookbook I with trademark these names) 4ish portions, 30 min
👉🏼3 tin chickpeas, 1 tin coconut milk, 1/2 mug red split lentils
👉🏼 1 onion, 3 small sweet potatoes, 2 red peppers
👉🏼 cumin, turmeric, garlic granules, sugar, salt, chilli flakes, bit of fajita mix (it makes everything yummy ok trust me on this one)
👉🏼 on the side: bed of spinach and 1/2 avocado
Chop veg in small chunks and cook with olive oil, mix in spices, add in tins and uncooked lentils, simmer!! ENJOY
