Brunch today consisted of 🥭 🍉 🍒 🍌 & grilled cheese🥪

I was making babe a grilled cheese with some soup for this gloomy, rainy day after our walk & he sat himself down and just started chopping fruits without me even asking & it put the biggest smile on my face!!

• I’m a mum to two boys (6 and 4)
• I’m terrible at IT (otherwise you’d have a video here to watch 😂)
• but I’m passionate about good health and good food, and helping people to find the right balance of the two for their own lives!!!
• I’m a nutrition geek, but my first degree was in languages so I’m great at translating • I also love the outdoors, getting a good night’s sleep, and yoga and pilates
• I don’t always practice what I preach but that’s ok - real food nutrition keeps it real
• oh and I love getting something for free so don’t be surprised if you find me foraging for food in the local parks 😉

1L de leite do dia (tipo vigor)
100g de leite em pó (usei NIDO)
25 gotas de coalho líquido (comprei na farmácia)
Sal q.b.

Na Bimby:
Colocar no copo o leite, o leite em pó e o sal e programar 5 min/37°C/vel 4.
Adicionar o coalho e mexer 30 seg/vel 4.
Deixar repousar 30 minutos.
Com a ajuda da espátula colocar o queijo no cesto da Bimby. De seguida colocar o cesto sob um prato fundo de sopa (ou num tupperware, de modo a que o cesto não chegue ao fundo)para que o soro escorra.
Deixar repousar durante 2 dias no frigorífico. Após este tempo, desenformar.

Summerberries and granola; cherry and strawberry and raspberry; blackberry and rolled oats. 🤔 We think a little differently here at PN. Specifically, when thinking about eating better, we like to ADD instead of subtract.⠀

🤭 Dietary subtraction ("I have to stop eating X") isn’t nearly as effective as addition ("I’ll eat more of Y").⁣⠀

For example: I want to lose 10 pounds and start eating better so I will stop eating 🥐🍔🍩 ... forever.⠀

Contrast that to: I want to lose 10 pounds. So I'll start eating 🥭🥑🍳 in one meal a day. Then, maybe in two meals after a week.⁣⠀
-⁣⠀
🧐 In our experience coaching over 100,000 clients, we've found that the more you deprive yourself of "bad foods", the more you think about them, and the more appealing they seem. Mm... donuts.⁣⠀
-⁣⠀
🤩 Instead, if you focus on ADDING so much healthy stuff — water, lean protein, fresh fruit and vegetables — there's less room or desire leftover for food that doesn't support your goals.⁣⠀
-⁣⠀
🥊 So you'll find yourself eating better without feeling deprived or feeling like you're "on a diet".⁣⠀

#SELFCARESUNDAY 😍

My self-care is a priority. A total happiness-hack. A game changer.

Prior to a few months ago, this wasn’t the case. I was stressed, my hormones were out of control, I couldn’t make it through the day without 36oz of coffee, I was drinking too much alcohol, I experienced drowsiness & brain fog, and overall I wasn’t my best self.

I’m the type of person that strives with a routine. I function best when my days are planned out. I love to-do lists, meal prepping, and setting goals for myself. I also love having things to look forward to.

Now, I look forward to going to bed early & waking up early. I no longer rush to make coffee & get ready for work in the morning. My mornings look something like this:

I drink warm lemon water, meditate, journal, 20-30 minutes of yoga, walk my dog, dry brush, shower, make a matcha latte, and finally, I compose my to-do list for the day. 🧘🏼‍♀️📓🍵I don’t always get to everything on this list, but doing a combination of these things has added a new kind of happiness to my life... something I didn’t even know I was missing.

How you start your day sets the tone for the rest of your day. Try waking up earlier (even just 30 minutes) each morning and do something for yourself. ✨You won’t regret it.✨

For the streusel fanatic, crumb bars are heaven sent! I love them so much I have multiple variations including Blueberry, Strawberries & Cream, and Peach, to name a few. The base that doubles as the topping is all the same. The only difference is the fruit centers.⁣⠀

I've added a new flavor to my repertoire of crumb bars -- LEMON. It's a creamy lemon... like key lime pie filling, but lemon. ⁣⠀

They’re nice and thick, crunchy on top, creamy in the middle, and soft on the bottom. ⁣⠀

These Lemon Crumb Bars are stored and eaten cold.⁣⠀
